Protein cookies are chock full of good stuff - good for you and good tasting. Gotta love chocolate that's good for you!

Who wants an excuse to eat cookies for breakfast, or snack time, or a meal? ME ME ME!!! You can bet I'm waving my hand furiously in the air!

The husband loves protein powder, and is constantly looking for new ways to eat said protein powder… so I invented a protein cookie! Cookies and protein??? Best of both worlds! Although a good old ice cream protein powder shake sure does hit the spot sometimes, these cookies are perfect when you want something a little more substantial, and also easily grabbed as you walk out the door..

These cookies pack a wallop of protein, my calculations were 5 grams per cookie! (will vary depending on the brand you use). Personally we are an EAS protein powder family, and we always have a package of vanilla and chocolate on hand for when the mood strikes. These cookies are made with chocolate, but I bet a vanilla version would be equally as good. Maybe even with a few raisins tossed in for good measure.

Not like a typical healthy cookie, these things have some crunch to them and stay that way for more than 5 minutes. You know what I’m talking about, those cookies that are all crisp and delicious and then the next day they are kinda meh… Not the case here, my friends!

They're delicious hot out of the oven or packed for your mid-afternoon snack for the week – these things travel well and with style! No crumbling, no nonsense, just yum.

I might have brought some in for some unsuspecting coworkers… and of course didn’t tell them what was in them until after the plate was stripped clean!

Feel free to mix things up and add in a handful of nuts or sub out the chips for raisins, dried cranberries, or even dried cherries, if you’re looking for an even healthier option. Chocolate cherry cookies - now that's something I could get behind. Chow!

Protein Cookies Recipe

    24 Servings

Ingredients

  • 1/4 cup Natural Peanut Butter
  • 1/4 cup Canola Oil
  • 1/4 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 2 tablespoons Ground Flax Seed
  • 5 tablespoons Boiling Water
  • 3/4 cup Chocolate Protein Powder
  • 1/2 teaspoon Baking Soda
  • 1 cup Quick Oats
  • 1/2 cup Chocolate

Directions

  1. Mix peanut butter, oil, and sugars until well combined.
  2. Add in vanilla, flax and water and stir.
  3. Dump in protein powder, baking soda and oats. Stir until everything is almost mixed, add chocolate chips and continue mixing.
  4. Drop  tablespoon size balls (I use a cookie scoop!) on a silicon lined baking mat and bake for 15 minutes.
  5. Let cool on a wire rack and chow down with a tall glass of milk!
