Air Fryer Breakfast Potatoes Recipe (Crispy, Easy, Tasty)

I’m a breakfast person. Breakfast for every meal of the day would suit me just fine! When it comes to serving a large family like mine a piping hot, delicious breakfast, you need some shortcuts, like this air fryer breakfast potatoes recipe.

On busy nights, or even just when the mood strikes, I am known for making a hearty breakfast to serve my family for dinner. I mean, who doesn’t love that? It can be anything from bacon, a fruit platter, and bagels to pancakes, sausage, and eggs.

It’s a huge bonus to keep breakfast foods on hand in general for this reason alone. It’s usually not a lot of prep work to make a pretty delicious breakfast at the last minute. Because I work weekends, we rarely get to have big morning breakfasts as a family with the exception of the day we celebrate Christmas, so breakfast for dinner is a great way to share this tradition and make it work for all of us.

One of my major challenges when preparing breakfast foods for my family is making sure everything is hot and ready at the same time, so using multiple kitchen appliances has become one of my best tricks. My stovetop and oven are usually holding their own, and sometimes my toaster, so an air fryer recipe is exactly what I needed! And hopefully you’ll love it, too.

How to Make the Perfect Air Fryer Breakfast Potatoes (AKA Crispy Home Fries)

First, start with the right ingredients:

  • 1 ½ lbs potatoes: Yukon gold, russet, or red potatoes all work well for this recipe.
  • 2 Tbsp olive oil

Seasoning blend:

  • 1 ½ tsp garlic powder
  • 1 ½ tsp onion powder
  • 1 ½ tsp smoked paprika
  • 1 ½ tsp salt of your choice
  • ½ tsp black pepper, freshly ground
  • Parsley or green onions (optional, but a flavorful and bright garnish)

Step-by-Step Instructions:

  1. Dice your washed and dried potatoes into ½ inch cubes.
  2. Place the diced potatoes in a large bowl and add olive oil and your spices.
  3. Toss well to coat the potatoes.
  4. Transfer potatoes to the air fryer basket and lightly shake to settle the potatoes to the bottom.
  5. Air fry at 375 degrees F for 10 minutes. Shake the potatoes gently to stir, then fry another 10 minutes.
  6. Air broil the potatoes for 2-3 minutes (if your air fryer allows) to add an extra crispy texture. You can also turn the temperature up to 450°F for the same crispy exterior.
  7. Top with fresh herbs and serve hot!

You can also serve your crispy breakfast potatoes as more of a hash by adding diced bell peppers and onions. Add a little hot sauce at the end or top them with a sunny side up or fried egg (or stir in some crispy bacon!). Feel free to experiment, using sweet potatoes, Yukon gold potatoes, russet potatoes, and other varieties.

Store your leftover potatoes in an airtight container and refrigerate for 3-4 days.

Why Are My Air Fryer Potatoes Soggy?

If your air fryer potatoes are soggy, next time soak the potatoes in cold water for an hour before preparing. This will remove excess starch. Pat them dry before dicing.

Also, air fry foods in a single layer to allow the air to circulate and fry them evenly. You may need to prepare your potatoes in batches.

Cook until your potatoes are fork-tender with a browned, crunchy coating.

Should I Microwave Potatoes Before Air Frying?

If you wish to speed up the air frying process, you can begin by microwaving your potatoes for 8-10 minutes before air frying.

Should I Boil My Potatoes Before Air Frying?

It is not necessary to boil your potatoes before air frying, but doing so may help improve the texture.

Consider the amount of time and energy you have when preparing your potatoes in the air fryer when deciding what methods to employ along with air frying.

Are Air Fried Potatoes Healthy?

Potatoes contain minerals, vitamins, and fiber. They are rich in vitamin C and have a history of being used as a life-saving source of nutrition, as this vitamin helped people prevent scurvy.

Potatoes are also low in calories, contain no fat or cholesterol, and are sodium-free in their natural state. They are loaded with starch, a kind of carbohydrate, and when not loaded with fattening butter or cheese, are a satiating way of staying on track in a calorie restrictive diet.

Air fryers are healthier than deep frying.

Compared to deep frying, air fryers can help reduce the amount of fat and calories in your food.

While not all foods placed in the air fryer are nutritionally balanced, it is still a healthier method of cooking than traditional deep frying.

Long story short: air fryers are better than deep fryers for your health, but their nutritional benefits are only as good as the foods you’re already using.
