Cheesy Hash Brown Breakfast Sliders are loaded up with seasoned ground beef, crispy hash browns with onions, eggs, and ALL THE CHEESE to make for a pretty epic little breakfast burger. You’re gonna love ‘em.

Warning: Danger ahead. These Cheesy Hash Brown Breakfast Sliders are pretty hard to quit.

It’s been awhile since we made these Breakfast Burgers, and so I decided we needed to work some more burger action into our breakfast and brunch. This made my husband, who is a big fan of all things meat and potato, exponentially happy.

This is a really simple recipe, and could be changed easily to accommodate more eggs, no meat, all the veggies, etc. It should also be noted that no matter how you adjust these, they are always exponentially better with a healthy dose of hot sauce.

I learned after I was through recipe testing that these babies actually freeze really well. Very similar to these Make Ahead Breakfast Bakes. Just make, wrap, and refrigerate or freeze, and then later reheat. I’m one of those weirdos with no microwave, but I can vouch for the reheat status of both the conventional oven and the toaster oven.

Hash browns on the burger were inspired by my sister’s love of putting potato chips on her sandwiches and fries on her burgers. Is this a thing that you do, too?

I tested these breakfast burgers the same weekend that I tested this recipe for Trailbazer Burgers, which made for a happy house of fellas in my neck of the woods.

Ingredients
  

  • 1 24-count package King’s Hawaiian Rolls
  • 1 pound Lean Ground Beef 85/15
  • 2 teaspoons Oil divided
  • 4 cups Frozen Hash Browns
  • 4 Egg very well beaten
  • 2 cups Shredded Mild Cheddar Cheese
  • 1 tablespoon Melted Butter

Instructions
 

  • Preheat the oven to 350°F and line a 13 X 9 baking sheet with foil. Slice the Hawaiian Rolls in half and place the bottom half in the prepared pan.
  • Press the ground beef into a large cast iron (or non-stick) skillet. Season with salt and pepper and cook over medium high heat until the meat is crisp and brown (around 4 minutes). Turn the beef and cook for another 3-4 minutes. Remove the beef to a plate lined with a paper towel.
  • Cook the hash browns until crisp according to package instructions, in the skillet you used for the hamburger meat.
  • Place the cooked hamburger on the bottom half of the bread in the pan. Top with the cooked hash browns.
  • Add one teaspoon of the oil and the onions to the skillet. Season with salt and cook over medium heat until soft and translucent.
  • Scatter the cooked onions over the top of the hash browns
  • Heat the remaining teaspoon of oil in the skillet. Pour in the well-beaten eggs and lightly scramble. Top with cheese, and then add the top half of the buns.
  • Brush the tops of the buns with melted butter and bake for 7-8 minutes, until the cheese is melted. Serve warm.
