You know that moment when you bite into your new favorite cookie?? Yup, it was like that when I first tasted these fresh out of the oven. Sure, all cookies taste better hot out of the oven, but the true test, 3 day old cookies, still giving you that little happy dance inside? Oh yes. This recipe is a keeper. Now for the real surprise: they’re Vegan Chocolate Chip Cookies.

Have you ever had that moment as you’re getting ready to bake cookies and you’re all out of eggs, or butter, or something. That’s one of the awesome reasons to bake vegan cookies. No eggs? No problem!

As I’m writing this post, I sadly realized all these vegan chocolate chip cookies are already gone… I think I know what I’m doing tonight, because I want more cookies! Super fast to whip up, and utterly delicious, serve with a tall glass of almond or soy milk and you’ll win over the heart of vegan and carnivores alike.

Ok, ok, give the carnivore a glass of cow milk. Since they won’t know any better that these are vegan anyway. Between the peanut butter, almonds, and dark chocolate chips, these cookies are packed, and I mean packed with flavor and texture. You won’t miss the butter one little bit. 

Don’t worry about the kids either, they won’t put their noses up to these “healthier” cookies, they won’t even know what hit them. These babies are perfect for the lunch box, yours or theirs. Or as an after-school snack. Post dinner with coffee. You get the idea – I might be kind of obsessed. 

I think these might be pretty good with other nut butters too – almond butter comes to mind, or maybe even cashew butter. No matter what, you’ve got to give them a chance. I swear, vegan chocolate chip cookies could easily become your new favorite cookie.

Ingredients
  

  • 1 cup Whole Wheat Flour
  • 1/2 cup Rolled Oats
  • 1/2 teaspoon Baking Soda
  • 2 tablespoons Chunky Peanut Butter
  • 1/4 cup Vegetable Oil
  • 3 tablespoons Water
  • 2 tablespoons Ground Flax Seed
  • 1 teaspoon Pure Vanilla Extract
  • 1/3 cup Brown Sugar
  • 1/3 cup Granulated Sugar
  • 1/2 cup Bittersweet Chocolate Chips vegan
  • 1/3 cup Slivered Almonds

Instructions
 

  • Preheat oven to 350°F.
  • In a medium bowl, mix together flour, oats, and baking soda.
  • In a large bowl, stir together peanut butter, oil, water, flax, vanilla, and sugars.
  • Add dry ingredients to wet and stir until blended.
  • Stir in chocolate chips and almonds.
  • Dough will be a bit dry and crumbly.
  • Form into tablespoon size balls and place on a silicon baking mat covered cookie sheet.
  • Press dough balls down slightly.
  • Bake for 12 minutes.
  • Devour like a crazy person.

Notes

  • Feel free to sub raisins for the chocolate chips.
  • If the dough is a bit too crumbly, add 1 tablespoon of water at a time until things hold together.
