When my husband and I first started dating, he introduced me to the best thing ever.

Strawberry Spinach Salad!

  • With feta cheese.
  • And avocado.
  • And also chopped almonds.
  • Because he is amazing and I married up so so much.

I know it’s an odd thing to remember from the early stages of our relationship, but actually back then I was not the best cook under the sun. Believe it or not, I lived off strange food combinations, soy yogurt (it was cheap and I was going through a hippie phase), fruit and nut energy bars and about the only thing I knew how to make in a tasty way: Homemade granola.

Yeah…

The first few months of us being together, I was just excited and overwhelmed and amazed at how delicious food could actually be. But I was TERRIFIED of cooking in front of him.

Or even just pouring a glass of orange juice, if we’re being honest for a minute.

But he was sweet about it and showed me all these cool tricks and things in the kitchen so that now I run the food blog while he changes diapers.

And I’m head over heels for him for it – otherwise I wouldn’t have this job!

Now this salad… It’s special to me because we literally had it once a week back in the day, and I eventually felt comfortable enough to slice strawberries in front of my husband and yeah… Stop making fun of me.

My kids get very excited about this salad, too. They love feta and strawberries, and my older daughter is all about the leafy greens and salad dressing (yes, I know how lucky I am).

So, when I pulled the strawberries and feta cheese out of the fridge to make this Spinach Strawberry Salad, they didn’t stop running around me in wild circles until they had their salad on their plates 🙂

How I make my Strawberry Spinach Salad with Feta and Avocado:

  1. Make the dressing
  2. Slice the avocado and strawberries
  3. Toss everything in a large bowl
  4. Serve immediately

Strawberry Spinach Salad Recipe, Director’s Cut:

When my husband first showed me how easy it is to make such an amazing salad, I couldn’t believe it. But it really is almost too simple to call it a recipe!

First, you’re going to need to whip up the dressing. It’s my White Balsamic Vinaigrette and I LOVE it on spinach salad! If you want to switch things up, my Lemon Poppy Seed Salad Dressing is out of this world for this as well.

Usually I make it right in the bowl but I wanted to show you how pretty it is, so I whipped it up in a jar.

Then you’ll want to find some really pretty strawberries. You HAVE to smell them at the store, and if they smell sweet and amazing, they should taste pretty good, too.

It can be tricky to find delicious strawberries, especially early in the season. Look for firm, red strawberries without mushy spots and an unbeatable scent and you should be good.

What’s even trickier though is finding a good avocado! I always test them at the store by gently pushing with the palm of one hand. If it’s slightly soft but not mushy, and the little spot where it was attached to the tree is a beautiful avocado-y green, I go for it.

But there are still always bummers, this just reduces the likelihood of you slicing open a brown mess.

The strawberries you can slice in any way you want. I usually mix it up a bit so the salad is more interesting – some into rounds, some into half moons, some into wedges.

The avocado I cube right in the skin and then scoop out with a spoon – so easy!

Then all that’s left to do is very gently tossing the salad ingredients with the dressing and serve it up!

The best part about this Strawberry Spinach Salad:

Sharing it! I love seeing my kids’ eyes light up when I put a large bowl of this salad on the table. It is one of their favorite salads, ever and they get so giddy, it’s too adorable to see.

My husband agrees that this is the best salad to have in spring – and totally something you could have with a simple Salmon Sheet Pan Dinner, or a delicious Lemon Thyme Risotto for an inspiring vegetarian dinner.

Ingredients
  

  • 3 tablespoons White Balsamic Vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • 1 tablespoon Honey
  • 1/2 teaspoon Dijon Mustard
  • 1/2 teaspoon Italian Seasoning
  • 1/4 teaspoon Garlic Powder
  • Salt and Pepper
  • 1/3 cup Chopped Almonds
  • 10 ounce bag Baby Spinach
  • 1 pound Strawberries hulled and sliced
  • 3/4 cup Crumbled Feta Cheese
  • 1 Avocado cubed

Instructions
 

  • To make the dressing, whisk all ingredients together and set aside.
  • To make the salad, gently toss all salad ingredients in a large bowl with the prepared dressing. Serve immediately.
