It’s summer which means zucchini season is here! These are our favorite zucchini recipes that you don’t want to skip.

As a kid I spent a lot of time with my grandmother during the summer months, with my hands in the dirt, smelling of sunscreen and her beloved Diet Coke.

My gram’s vegetable gardens were a thing of beauty – overrunning with tomatoes, herbs, winter squashes, berries, and loads and loads of zucchini!

Next to a classic tomato sandwich with a smear of mayonnaise on the perfect, soft sourdough bread, I always wanted to eat everything zucchini.

My grandma seemded to have no shortage of delicious zucchini recipes up her sleeve. The chocolate zucchini muffins for breakfast were my favorite!

As an adult my palate has expanded and I love eating zucchini no matter the season, no matter how it’s prepared. Grilled, baked or fried, I’ll take it all.

I now grow my own zucchini each season and love experimenting with different ways to use the famed summer squash once my haul is plucked.
