If you know this quote, then your back probably hurts and you get excited about new kitchen appliances. It’s me. I am that person.

Maybe I should’ve taken some cues from Popeye and eaten more spinach as a kid. I just couldn’t do it. Especially not the canned kind!

Fast forward more decades than I care to admit, and I can’t get enough of the stuff. It’s so versatile and can be added to just about anything.

Spinach is one of those superfoods that is packed full of vitamins and minerals. I could wax endlessly poetic about this amazing leafy green.

(And it really really helps that it's much more common to eat fresh spinach these days versus those old, bland cans!)

Spinach is great by itself or added to various dishes and even smoothies, which is why I'm sharing a few easy ways to eat more spinach.

If you’ve ever sauteed spinach, then of course you know it takes about half of an acre to yield a single serving. Spoiler! It’s worth it.

1. Easy White Lasagna Recipe

I’m always intimidated by lasagna. There are so many steps and I’m afraid I’ll mess it up and it’ll be dry. No one likes a dry lasagna. This recipe takes away all that doubt. The cream sauce is rich and decadent and so easy to make. It was so much easier to make than I had imagined.

2. Cheesy Grits Recipe

There is little that I love more than a simple breakfast of cheesy grits with way too much salt and a fried egg over the top. Yum! The addition of spinach helps to add a little extra pizazz to your meal. It also gives the dish a nice pop of color. I like to eat mine with some toast or an English muffin to soak up all that goodness!

3. Spinach Artichoke Quinoa Casserole Recipe

This recipe is a little more labor intensive, but your hard work will soon be rewarded. Cheesy, creamy, deliciousness is so close you can almost taste it! I love a dish that explores all the basic tastes in one bite. The tartness of the artichokes and the slight bitterness from the spinach really help to balance out the richness and give it wonderful flavor.

4. California-Style Eggs Benedict Recipe

This unique take on the classic breakfast recipe subs in spinach instead of Canadian bacon and adds a little twist to the hollandaise. Is it better than the original? In my humble opinion - it's quite incredible! The flavors are deep and complex. I suggest leaving the bacon on there, for the best of both worlds!
