I have such a love-hate relationship with summertime. On one hand, it's summer – clear sunny skies, warm weather, a reason to break out summer dresses and sandals and the best time to just go outside for any reason. Plus nothing beats dining al fresco in your backyard, on a picnic, or in my case on the streets of Brooklyn. It's always the perfect time to visit our favorite bars with backyards and order up beers or mojitos.
On the other hand though – that warm weather turns into hot and humid weather, those sunny skies burn my pasty white skin in an instant, and going outside means fending off a swarm of mosquitoes.
It's a toss up, but I have such a desire to be out there, instead of holed up in the air conditioning where I do tend to stick myself. I want to be at the beach, I want to be by the pool, I want to head down to Coney Island for the day for fun in the sun. Every time it happens, I'm done in 10 minutes. The sun hates me - or maybe it's the other way around.
I'm pretty sure I finally figured out a nice way to enjoy summer fun without being in the sun with this sunny mango mojito. It's the perfect cooling cocktail to drink in the shade, by the pool, where no sand will end up places it shouldn't.
I'm of the opinion that summer cocktails need to be easy; something to toss together whenever the mood strikes and no need to turn on the blender to do it. Sure, frozen drinks are probably consumed at their peak in the summer, but your muddler and a little elbow grease gets that mango pureed enough for our purposes. The sweet mango, fresh mint and tangy lime is a winning combination to sip on all summer long.

Mango Mojito Recipe
Ingredients
- 1/2 Mango, Fresh, diced
- 12 sprig ofs Mint, Plus extra for garnish
- juice from half a Lime
- 1/2 ounce Simple Syrup, 1:1 ratio of sugar and water
- 1 1/2 ounces White Rum
- Club Soda
- Ice Cubes
Directions
- In a cocktail shaker place the diced mango and mint and muddle until the mango is fully broken up.
- Add the lime juice, and simple syrup and rum – stir to combine.
- Fill a highball or Collins glass with ice, pour the mojito over and top with club soda.
- Garnish with a sprig of mint.
