Hawaiian Chicken Tacos Recipe

These Hawaiian Chicken tacos are such a fun twist on a classic taco. After visiting the beach recently, I had a craving for some sweet and spicy grilled chicken.
And I was devastated when I was NOT able to find exactly what I was wanting. So, I created it at home after our vacation!
How to make Hawaiian Chicken Tacos:
These Hawaiian chicken tacos are such a fun version of a taco! I love tacos, classic ground beef tacos are one of my go to comfort foods.
But tacos are one of those things you can easily change up and make with whatever fillings you want or have on hand!
- To start we will prep our Hawaiian chicken. This is a recipe that comes together easily, but it does take some time to marinate to get the best flavor. So make sure to leave some time to let this step happen.
- Cook the chicken. After marinating for 3-6 hours (try not to do overnight because of the pineapple juice in the marinade, it can make your chicken slightly mushy if left too long) cook the chicken either on a grill, grill pan, or other large skillet.
- Chop the chicken once it’s cooked. Remember chicken should reach an internal temperature of 165 to be considered safe to eat according to FDA regulations.
- Make your tacos! Fill the corn tortillas with the chopped chicken and add any other toppings you want!
What toppings can I add to Hawaiian Chicken Tacos?
- Grilled pineapple is one of my favorites!

- Crumbled feta cheese
- Coleslaw
- Pickled jalapeños
- Whatever else you want and think will taste good!

Hawaiian Chicken Tacos Recipe
Ingredients
- 2 pounds Boneless Skinless Chicken Thighs
- 1/4 cup Light Brown Sugar
- 1/4 cup Low Sodium Soy Sauce
- 1 teaspoon Minced Fresh Ginger
- 1 teaspoon Minced Fresh Garlic
- 1/2 cup Pineapple Juice
- 2 tablespoons Ketchup
- 2 teaspoons Sriracha Chili Sauce, or other hot sauce of choice
- 1/2 teaspoon Worcestershire Sauce
- 1 cup Pineapple, chopped (fresh)
- 2 tablespoons Chopped Red Onion
- 1/2 cup Green Bell Pepper, diced
- 1 tablespoon Chopped Cilantro
- 1 teaspoon Lime Juice
Directions
- Prepare the marinade by combining the sugar, soy sauce, ginger, garlic, pineapple juice, ketchup, hot sauce and Worcestershire sauce together, add ingredients to a large resealable plastic bag and whisk together.
- Add the chicken to the bag, seal, and store in the refrigerator to let marinate for 3-6 hours.
- After marinating time, preheat a grill or large skillet on a stovetop. Remove the chicken from the marinade and grill or cook the chicken for about 5-7 minutes. Then flip and cook the other side for another 5-7 minutes. Chicken should reach an internal temperature of 165°F to be considered cooked according to FDA regulations.
- Once chicken is fully cooked, remove from grill or skillet. Set on a cutting board. Let it rest for a few minutes to cool slightly. Chop or shred the chicken.
- Make the tacos by filling the corn tortillas with the cut-up chicken, top with fresh pineapple pico de gallo.
