Today would be categorized as a perfect spring day for me. Cloudless sky with a light breeze, warm enough to have the windows open without turning the house into a humidity box. The birds outside are happy too, busily building up their nests and chittering to each other, while my cats snooze lazily in the windowsill. Days like these make you want to linger over a plate of pancakes on the patio, or at least swing in the hammock with a smoothie. Alas, weekdays.

While I love a fabulous brunch spread, most mornings I only have time for a quick bite before getting to work. (Yes, even when you work at home there’s plenty to do right away!) A lot of the time that means coffee and whatever my toddler has left behind on his plate, but I’m doing my best to make sure I make myself a real meal. Which means coffee cake in a mug!

Coffee cake is one of my absolute favorite things to make and eat — this apple coffee cake was one of my very first recipes for Food Fanatic, in fact — but making an entire pan for just me is a bit silly. I also love experimenting with flavors like in this espresso streusel coffee cake, but my first love is straight-up cinnamon coffee cake.

Making coffee cake in a mug is just as easy as it sounds. A quick mix of ingredients and just 1 minute in the microwave, and you have a piping hot breakfast treat! Sure, it’s not going to look like the gorgeous slices you’re used to, but all the classic taste is right there in each spoonful, thanks to the brown sugar and cinnamon swirl. And, if I want to balance out my breakfast with some protein, I can just whip up some 60-second scrambled eggs at the same time!

Coffee cake in a mug is incredibly customizable. Add fruit or chocolate pieces if you want. I like using coconut oil instead of the butter to give it just a little bit something extra, and sometimes I’ll swap the vanilla extract for orange or lemon. You decide!

Go ahead and make this coffee cake in a mug for breakfast tomorrow. Or, right now! After all, with only 1 minute of cooking time, there’s no reason to wait.

Ingredients
  

  • 3 tablespoons All-Purpose Flour
  • 1 1/2 teaspoons Granulated Sugar
  • 1/4 teaspoon Baking Powder
  • pinch of Salt
  • 1 tablespoon Butter or coconut oil, melted
  • 1 tablespoon Milk
  • 1/4 teaspoon Pure Vanilla Extract
  • 1 teaspoon Brown Sugar
  • 1/8 teaspoon Ground Cinnamon

Instructions
 

  • In a small bowl, mix together flour, sugar, baking powder, and salt.
  • Mix in melted butter, milk, and vanilla extract. Scoop half the batter into a small microwave-safe coffee cup.
  • Mix together brown sugar and cinnamon and sprinkle half over batter in cup. Top with remaining batter, then remaining brown sugar mixture.
  • Microwave for 1 minute. Let cool slightly and enjoy.
