Cheddar Sour Cream Chicken has a secret ingredient – crunchy potato chips! Easy and filling, this delicious main comes together quickly.

Let’s be honest, I cook nearly every single day and almost always I’m making a new recipe for my family. That means it’s rare that we repeat recipes, but this one is going to be a repeat!

Now, typically, I make a dish and my family eats it, but lately all of our meals have been full of vegetables because I’ve been watching what I’m eating closely.

So, I decided when I made this, I would make exactly enough without leftovers because when I make veggie-filled meals they aren’t really begging for leftovers.

Guess what? As soon as my husband and kids started eating this Cheddar Sour Cream Chicken, they were ALL asking for seconds.

That figures, right? The one time I don’t make extra, they suddenly want extra. Of course they do, because it’s made with cheddar and sour cream potato chips! And I only gave them a side of veggies, not the entire dish of veggies.

I guess I need to be better about variety with them? Maybe warm them up to the all veggie meals?

Let’s get to this dish though because it was well loved. I used boneless, skinless chicken thighs and then coated them with sour cream and crushed chips. Then, I added butter to the coating - that gives it a juicy taste.

These are so delicious. The key is that if your topping falls off a bit when you are moving them from the pan to the plate, you can easily just press it right back onto the chicken. It gives the chicken an enhanced flavor.

My family eats chicken quite a bit, so it was a nice change from the normal go-to chicken dinner. It can also be made with a variety of chips, so you can mix it up with different flavors.

Cheddar Sour Cream Chicken Recipe

    6 Servings

Ingredients

  • 6 thighs Boneless Skinless Chicken Thighs
  • 1 cup Sour Cream
  • 3 cups Crushed Cheddar Sour Cream Potato Chips
  • 1/2 cup Butter, melted

Directions

  1. Preheat oven to 400°F.
  2. Place the sour cream in one bowl and the crushed chips in another.
  3. Cover each chicken thigh with sour cream and then dip in the chips.
  4. Place on a greased baking sheet.
  5. Drizzle just a little butter on each chicken thigh.
  6. Bake for 30 minutes in the oven on 400°F or until 165°F internally.
  7. Carefully move to the plate from the baking sheet, if some topping falls off, simply put it right back on.
  8. Serve.
