Buffalo Blue Cheese Dip is game day grub like you’ve never had. Serve it with celery, chips, or even pretzels!
Lately, I have been all about simple dips and quick appetizers. With the endless snow days that have kept us stuck at home, I’ve had to be crafty and use the ingredients that are available in my fridge and pantry if I want a fun snack.
Now with the big game just days away, I can’t guarantee that we’ll have tons of shopping opportunities between now and then. This crazy winter weather has forced me to flex my creative muscles in the kitchen and figure out how to come up with some exciting appetizers and snacks to keep my family happy while simultaneously trying to divert attention away from the cabin fever that keeps creeping into our house. This Buffalo Blue Cheese Dip was born out of my most recent ‘raid the fridge’ adventure.
You see, I’m a huge wing fan. Huge. In fact, my BBQ chicken wing recipe was the very first recipe that I shared here on Food Fanatic almost exactly one year ago. Can I just say that this year flew by?!
Anyway, during football season, we’ll take the kiddos out to our local wing joint and order baskets of wings and watch the game. I like my wings spicy, but not too spicy, and always with plenty of blue cheese dressing and celery on the side. Never ranch. For me, it’s all blue cheese, all the time.
Because of my love of blue cheese (any cheese or cheese dip, really) I tend to keep a tub of crumbles or occasionally, a wedge of something a little fancier in the fridge. On my recent I-need-a-snack-and-I-need-it-now trip to the kitchen, I came across a wedge of blue cheese that I had bought for a different recipe that never happened (am I the only one that does that?) and a partial brick of cream cheese.
Eyeballing the bunch of celery, I devised a plan. It turns out that mixing cream cheese, blue cheese and a bit of other fridge staples together creates a fabulous Buffalo Blue Cheese Dip that is a perfect for dipping celery. It’s great with pretzels, too, if I’m being completely honest.
My snack of necessity turned into a keeper and one that I will definitely be making again. I held back a little on the hot sauce to make sure my kiddos would eat it, but that’s one of the best parts of this recipe – it’s very customizable to your personal taste. Add a little more hot sauce or cayenne if you like your dip kicked up a bit. I’m glad to be armed with this new quick and easy Super Bowl snack if we find ourselves snowed in next weekend.
