We just love this recipe for Dr Oz Detox Soup because it is SUCH an easy way to pack a whole lot of nutrients all into one meal. 

The basis of the dish is a green detox soup made with a blend of fresh vegetables. But vegetables alone are not enough to be completely satisfying and don’t meet all your nutritional requirements, so the recipe also calls for healthy fats and plant based protein.

Examples of plant based proteins to use in your detox soup

Cashews

These kidney shaped seeds from the cashew tree are one of our favorite proteins to use in soup because they are so wonderfully creamy when blended! 

They also offer plenty of health benefits – they are rich in unsaturated fats (the healthy kind of fat that your body needs) and lots of different minerals, including copper, magnesium and manganese. 

What’s more, they contain fiber, they are low in sugar and they contain as much protein as the same quantity of meat!

Lentils

These tiny legumes are a staple in Indian cuisine. They are available in a range of different colors – all with slightly different textures – and all super healthy! 

They are also very economical to buy!

Packed full of protein, lentils are low in fat and rich in polyphenols, which protect the body from disease. They also contain loads of fiber, plenty of iron and they are a good source of folic acid, which is especially useful for expectant moms.

Hemp seeds

The seeds of the hemp plant – techniclly a type of nut and with a lovely nutty flavor – are scientifically proven to be very beneficial to our health.

They contain two essential fatty acids – linloeic acid (commonly called omega-6) and alpha linolenic acid (commonly called omega-3). 

They also provide more protein than either flax seeds or chia seeds and are packed with important minerals like zinc, iron, calcium and magnesium.

Almonds

We love using almonds in soups – they bring a subtle sweetness and add lots of creaminess too.

They are rich in monounsaturated fats which help protect your heart. And if you’re worried that a food rich in fats will hinder your weight loss efforts, the good news is that a dish containing almonds leaves you feeling full and satisfied, so you are less likely to reach for unhealthy snacks later on.

Almonds alao contain lots of B vitamins, plus selenium, zinc, vitamin E and calcium.

Ingredients
  

  • 2 teaspoons Extra Virgin Olive Oil
  • 2 cloves Garlic chopped
  • 2 tablespoons Diced Onion
  • 3 cups Broccoli
  • 8 ounces Baby Spinach Leaves
  • 2 Parsnip peeled, cored and chopped
  • 2 ribs Celery trimmed and chopped
  • 1 handful Fresh Parsley roughly chopped
  • 1 pinch of Sea Salt to taste
  • 1 pinch of Freshly Ground Black Pepper to taste
  • 1 tablespoon Lime Juice or to taste
  • 2 tablespoons Dry Lentils or other plant-based protein (see notes above)
  • 1/2 cup Sweet Potato cooked and cubed (optional)

Instructions
 

  • In a stockpot, fry the onions and garlic.
  • Add all the rest of the ingredients except the sweet potato cubes, plus enough water to cover.
  • Boil until everything is soft.
  • Blend until smooth.
  • Add the cooked sweet potato cubes before serving if desired.
