Extra Virgin Olive Oil

cloves
Garlic
chopped

Diced Onion

Broccoli

Baby Spinach Leaves

Parsnip
peeled, cored and chopped

ribs
Celery
trimmed and chopped

Fresh Parsley
roughly chopped

Sea Salt
to taste

Freshly Ground Black Pepper

Lime Juice
or to taste

Dry Lentils
or other plant-based protein (see notes above)

Sweet Potato
cooked and cubed (optional)
Instructions
In a stockpot, fry the onions and garlic.
Add all the rest of the ingredients except the sweet potato cubes, plus enough water to cover.
Boil until everything is soft.
Blend until smooth.
Add the cooked sweet potato cubes before serving if desired.
