Tortellini Bake Recipe

Are you looking for an easy weeknight vegetarian meal?  Pasta is always one of my family’s favorites and I hope this one will get to be one of yours too. Cheese tortellini gets paired with spinach and marinara sauce. Mozzarella cheese tops off this dish and it is baked until it is cheesy and golden brown.  It includes spinach and tomatoes so there is no need to serve anything else with this complete meal unless you want to.  Now let’s talk about how easy it is to put together.

I love this meal because it takes less than half an hour from start to finish. If you desire, it can be assembled in the morning, left in the fridge and baked at dinner time right before serving. Can things be any easier than that?

I use a 19 ounce package of frozen tortellini. They are precooked and boil in only a few minutes. But you can also use refrigerated tortellini which also cook very quick.  Not all package sizes are the same but as long as you are using a package that is within a few ounces of what I used, your recipe will be fine.

Now let’s talk marinara sauce. I have to tell you that I am a marinara snob and make my own.  I always have some in the freezer but that is just me. Feel free to use your favorite brand of marinara or spaghetti sauce. If you like to make your own, it’s actually very easy and my 25 minute marinara sauce recipe is a staple in my house. This recipe is very versatile and if you need some meat with your meal, you can use meat sauce instead of marinara too.

Ingredients
  

  • 18 ounces Tortellini Pasta with Cheese Filling frozen
  • 2 cups Marinara Sauce
  • 1/4 cup Grated Parmesan Cheese
  • 2 cups Chopped Frozen Spinach
  • 1 1/2 cups Mozzarella Cheese shredded
  • 2 teaspoons Dried Basil for garnish

Instructions
 

  • Preheat oven to 375°F. Cook the tortellini according to package directions, boil about 5 to 10 minutes according to instructions. Drain when done.
  • In a small sauce pan, mix together marinara, Parmesan cheese and spinach. Cook on medium heat until mixture comes to a simmer. Stir well.
  • In a 2 quart baking dish, mix together tortellini and sauce mixture. Sprinkle with shredded mozzarella cheese.
  • Bake at 375°F for 8 minutes. Turn the broiler on and bake for 2 to 3 more minutes or until the cheese gets slightly golden brown.
  • Cool for a few minutes. Sprinkle with dried basil and serve in bowls.
