Taco Appetizers Recipe

I found these little chips in the snack and chip aisle (they’re called Dippin’ Chips) and while they’re all shaped just a little different, some of them look like little bowls and some look just like mini taco shells. They’re pretty darn cute! So I like to make mini tacos with them.

This idea was born one day when I wanted tacos for dinner when we were having friends over. My other half was making one of his signature dishes and a lot of time and effort went into the dish. I wasn’t about to say, “That’s nice honey. How about tacos instead?”

You should see him cook. He is very meticulous. A couple times each week, I’ll go into the pantry and throw stuff together just to see what happens. He will go to the store for each ingredient and measure to the last drop. After all that work, I’m grateful. Tacos almost forgotten.

Making mini tacos seemed like a good compromise. His dish takes hours to make, which worked out well for me. A quick trip to the store and the appetizer is almost ready! Thanks to my daughter for putting these together.

I got my taco fix and we still enjoyed his main dish. Total win-win. Everyone loved all the food and our guests had a blast!

The taco spices I use for my ground beef is pretty simple. I have no problem with any other taco seasoning recipe with more ingredients but these just seem to be on hand every time I get a taco craving. The last thing I remember to do is buy spices when I pick up a chuck roast for ground beef. Give it a taste and add more spices if you want so you can make it just the way you want it.

Ingredients
  

  • 1 pound Ground Beef
  • 2 teaspoons Chili Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Onion Powder
  • Salt and Pepper
  • 1 family-size package Tortilla Scoops
  • 2 cups Shredded Cheese
  • Shredded Lettuce
  • 2 Roma Tomato Chopped
  • Sour Cream

Instructions
 

  • Preheat a large pan on medium high heat.
  • Add the beef to the pan and mix in chili powder, paprika, cumin, onion powder, and salt and pepper to taste.
  • After fully cooked, assemble the cute little mini tacos with beef, cheese, lettuce, tomatoes, and sour cream, and serve!
  • Enjoy.

Notes

  • With these little tacos, a little goes a long way. It doesn’t take much to fill up the little chips!
  • I grind up a chuck roast for my ground beef, fat and all. If you use a lean beef, add a little oil to the pan.
