Strawberry Mints Recipe

Sweet strawberry mints are so perfectly pink. This Valentine’s day treat will be sure to please!

There is so much pressure as a food blogger to create the ultimate Valentine’s Day dessert for my husband and family. Every year I try to make an “ultimate chocolate cake” (this Mocha Cake with Toffee Crunch would do the trick…) or other decadent dessert. This year, I have a new plan. Valentine’s Day falls on a Friday, so we are going out to a beautiful restaurant and having a fabulous meal. A meal that I don’t have to cook. A meal that I don’t have to clean up after.

Doesn’t that sound ideal?I will, however, surprise my family with a batch of these Strawberry Mints, waiting at home to be devoured! I made these a few weeks ago (as a practice run) and the kids couldn’t keep their hands off of them!

My grandma uses this mint recipe every Christmas to make red, white, green mints. It’s her way to add some color to her holiday cookie trays. Instead of using food coloring, I thought it would be fun to use strawberry JELL-O gelatin to add some color and a hint of flavor to this fun treat!

The mixture is easy to whip up with just a few simple ingredients. I suggest enlisting the help of your children, or turning on a good chick flick movie while rolling the “dough.”  As for storing this treat, I prefer to leave mine out on the counter (not covered). I like them better as they get “drier.” However, my grandma’s recipe calls for putting them in an airtight container in the refrigerator. They do taste delicious cold, but they are softer than I prefer. You decide how you like them!

You can use any flavor of gelatin for any holiday. Imagine the possibilities! Lime gelatin for St.Patrick’s Day, Berry Blue and Cherry for 4th of July – you get the idea. The gelatin doesn’t overpower the mint flavor, but it does add a subtle taste to these mints. I think you are going to love it!

Ingredients
  

  • 1/2 cup Unsalted Butter softened
  • 1/2 teaspoon Mint Extract
  • 1/3 cup Light Corn Syrup
  • 3 3/4 cups Powdered Sugar
  • 3 tablespoons Strawberry Gelatin

Instructions
 

  • In a large mixing bowl, blend all the ingredients together until fully combined. The dough will be very crumbly.
  • Once you pinch a small amount in your hand, roll it until it comes together. You can make any size mints you like. I use about 2 teaspoons of dough, roll it into a ball, then place it on a piece of parchment paper. Flatten each ball with the tines of a fork.
  • Allow the mints to sit for a while to become firm. After about 3 hours I put them in a bowl on my counter and leave them uncovered (until they are completely devoured). I prefer them to get more firm as the days (hours) go by! However, if you like, my grandma prefers to refrigerated them in a covered container after letting them sit for 3 hours. You decide how YOU like them! ENJOY!
