There is something quite irresistible about the texture of cooked shredded potatoes - they tend to get crispy and delicious, particularly in this recipe where their texture contrasts with the creamy sauce. 

The cheese adds an extra rich flavor, making this a really tasty dish that's very easy to put together.

You can serve it as a side dish with something like Chicken Fried Steak or Salisbury Steak, or even as part of a hearty breakfast.

How to shred potatoes

This recipe calls for frozen shredded hash browns, which makes life easy for you and is why this dish is so quick to put together. 

But if you can't get frozen hash browns or simply prefer to use fresh potatoes, here's how to prepare them.

Peel your potatoes. We find Russets - or other starchy potatoes - the best type to use, as they go the crispiest!

Shred the potatoes, using the largest hole on your box grater. 

Wrap the shredded potato in a few layers of cheesecloth or a clean kitchen towel, then twist as hard as you can to get out all the moisture. Removing the moisture is key to getting the potato to cook evenly and to go nice and crispy.

Your shredded potato is now ready to be used in this recipe.

If you want to use some to make hash browns, then just press the shredded potato firmly into a pan and fry it in canola oil, turning once, until crisp and golden on each side.

Some people like to cook the shredded potato in the microwave on high for 2 minutes before frying. The reason is that this techniqe helps the potato to get crunchy - and stay crunchy - for longer.

Shredded Potato Recipes

    8 Servings


  • 2 cups Cream, or light cream
  • 1/3 cup Unsalted Butter
  • 1/2 teaspoon Salt
  • 1/4 teaspoon White Pepper
  • 1 24 ounce bag Frozen Hash Browns, (the shredded variety, thawed)
  • 1/2 cup Freshly Grated Parmesan Cheese


  1. Preheat the oven to 325 F.
  2. Mix the half and half, butter, salt, and pepper in a small saucepan and place over a medium-low heat. Cook until the butter melts, but be careful not to let the cream boil.
  3. Put the thawed shredded hash browns into a 13 x 9-inch glass baking dish. 
  4. Pour the hot cream and butter mixture over potatoes and sprinkle with the Parmesan cheese.
  5. Bake for around 45 to 55 minutes until the potatoes begin to brown on top. Serve warm.
