What Is a Tater Tot Casserole?

This particular type of dish, sometimes referred to as hot dish, has many different variations. If you can think it up, I guarantee there’s a tater tot casserole version.

The standard version features frozen tots, cream of mushroom soup, seasoned ground beef, and lots of cheese. From there, you can add whatever flavors you wish.

The Duggars tater tot casserole has many of the same elements, with a little twist. (And it's a super popular dish!)

You can prepare tater tot casserole ahead of time, but it also comes together so quickly that there’s almost no reason to do so.

Likewise, it's also a great recipe to get the kids involved with cooking. They can help layer everything together and arrange the tots on top!

How to Make Taco Tater Tot Casserole

You just got home from work. Your little tax deductions are already fighting with each other and whining about being hungry.

You want tacos, but it seems like so much work and let’s face it, you’re tired.

Head to your pantry for a few staples and you’ll have all the flavor and fun of a taco, in one dense, gooey, cheesy, hug-on-the-inside, delicious dinner ready in under an hour.

  1. Begin by preheating your oven and preparing a baking dish.
  2. In a large skillet, brown the ground beef along with the onion and garlic.
  3. Add green chiles, black beans, taco seasoning, corn and some of the cheese. Stir and heat through.
  4. Pour the beef, cheese and bean mixture into the prepared dish.
  5. Top with tots arranged in a single layer in neat rows.
  6. Pour the enchilada sauce over top and bake.
  7. Remove from the oven, top with the remaining cheese and bake again until slightly golden.
  8. Let it cool slightly before serving topping with garnishes as desired.

Whlie garnishing your tater tot casserole is entirely optional, here are a few suggestions if you want to punch the flavor up even more!

Personally, I like to top mine with crunched up tortilla chips and a little salsa! More flavor is more flavor, right?

Taco Tater Tot Casserole Recipe

Ingredients

  • 1 pound Lean Ground Beef
  • 1 small Onion, finely diced
  • 2 cloves Garlics, minced
  • 1 4 ounce can Diced Green Chiles
  • 1 packet Taco Seasoning
  • 1 15 oz can Canned Black Beans, drained and rinsed
  • 12 ounces Frozen Corn
  • 3 cups Mexican Style Shredded Cheese
  • 28 ounces Frozen Tater Tots
  • 1 10 ounce can Red Enchilada Sauce

Directions

  1. Preheat your oven to 375 degrees and spray a 9x13 baking dish with cooking spray.
  2. In a large skillet, brown the beef and the onion together. Add the garlic towards the end of the browning process and cook for 1 minute. Drain.
  3. Add the green chiles, taco seasoning mix, black beans, corn, and 2 cups of the cheese. Stir together to combine.
  4. Pour mixture into the prepared 9x13 pan.
  5. Arrange tater tots on top of the mixture in a single layer.
  6. Pour the enchilada sauce on top of the casserole as evenly as you can.
  7. Bake uncovered for 30 to 40 minutes or until the tots are nice and crispy.
  8. Sprinkle the remaining 1 cup of cheese on top and return to the oven for 2 to 3 minutes or until the cheese has melted and the top is slightly browned to your liking.
  9. Optionally - top with olives, cilantro, sour cream, tomatoes when serving if desired.
