Ingredients
  

  • 1 Pineapple peeled, cored and cut into 8 long slices
  • 1/2 cup Dark Brown Sugar
  • 1/2 cup Orange Juice
  • 3 tablespoons Orange Blossom Honey

Instructions
 

  • Preheat oven to 450°F and prepare a rimmed baking sheet with parchment paper or a silpat, set aside.
  • In a large bowl whisk together dark brown sugar, orange juice and honey. Add in pineapple and let sit for about 10 minutes.
  • Add pineapple to the prepared baking sheet (save the juice and sugar mixture) and roast for 15 minutes. Flip, baste with juice/sugar mixture and roast for another 15 minutes. The pineapple is ready when it’s caramelized.
  • Remove from the oven, baste once more with the reserved juice/sugar mixture and let cool to room temperature.
  • Once cool add to a high speed blender (I use a Vitamix) and puree till smooth and creamy.
