1Pineapplepeeled, cored and cut into 8 long slices
1/2cupDark Brown Sugar
1/2cupOrange Juice
3tablespoonsOrange Blossom Honey
Instructions
Preheat oven to 450°F and prepare a rimmed baking sheet with parchment paper or a silpat, set aside.
In a large bowl whisk together dark brown sugar, orange juice and honey. Add in pineapple and let sit for about 10 minutes.
Add pineapple to the prepared baking sheet (save the juice and sugar mixture) and roast for 15 minutes. Flip, baste with juice/sugar mixture and roast for another 15 minutes. The pineapple is ready when it’s caramelized.
Remove from the oven, baste once more with the reserved juice/sugar mixture and let cool to room temperature.
Once cool add to a high speed blender (I use a Vitamix) and puree till smooth and creamy.
