Pumpkin Spice Chai Latte Recipe

Getting sick as a grown-up is literally the worst.
I recently came down with bronchitis and I swear that my children suddenly became more obsessed with me than usual.
“Maybe if I hang around you a bunch, I’ll get sick too,” my 13 year-old son said.
WHAT EVEN IS THIS WORLD. No. All the no.
There’s something about a parent laying in bed in the middle of the day that invites a circus. My four year old showed up with a bowl of marshmallows and a sticker book, both dogs in tow. Why, exactly, they all needed to be in my bed was never quite made clear.
All I remember is waking up to her starting at me, covered in stickers and casually popping marshmallows in her mouth as the dogs fought over the strays that she was dropping.
“CAN I JUST REST, PLEASE??” I asked.
“But mom…” she replied. “we just LOVE YOU SO MUCH.”
Sometimes I really wish that I wasn’t so fascinating. I mean…laying in bed coughing. I certainly understand the appeal. It’s downright irresistible.
And of course, the world doesn’t stop when you become ill. The laundry continues to pile up, the dog poops on the floor, and children stuff themselves with Little Debbies while you’re napping, discarding the wrappers on every available surface of the home.
I was literally afraid to leave my room at one point. What would I find once I ventured out of the confines of my bedroom? Would I recognize the vast wasteland?
Some things are really better off not knowing.
One thing that helps a girl get through such times is a hot, cozy beverage. Preferably enjoyed without two kids and two dogs performing acrobatics next to you in your bed.
This Pumpkin Spice Chai is super simple to whip up if you’ve already got the chai mix prepared. Just stir it into a mug with some hot water and pumpkin, and you’ve got a sweet and spicy fall drink that’ll warm you right up.
Add a few cookies or even a donut on the side, and your day is made.

Pumpkin Spice Chai Latte Recipe
Ingredients
- 1 cup Instant Tea
- 1 1/2 cups Nonfat Dry Milk
- 1 1/4 cups Granulated Sugar
- 1 teaspoon Ground Ginger
- 1 teaspoon Cinnamon
- 1/2 teaspoon Ground Cloves
- 1/2 teaspoon Cardamom
- 1/2 teaspoon Nutmeg
- 1/4 teaspoon White Pepper
- 1 tablespoon Pumpkin Puree, heaping, per large mug
- Hot Water
Directions
To make the Chai Mix:
- In a large bowl, combine all of the dry ingredients. Mix with a large spoon until combined.
- Place in a blender or food processor and blend until a fine powder forms.
- Keep stored in a jar or airtight container.
To prepare the Chai:
- Place 3 heaping teaspoons of chai mix into a 10-ounce mug.
- Add 1 heaping Tablespoon pumpkin puree.
- Fill with boiling water and stir until dissolved and smooth. Top with whipped cream and cinnamon if desired.
