To say I’m highly passionate about nut butter probably sounds… well, nutty, but I’m just fine with that. Color me nutty, but I LOVE the stuff.

I know I’m not alone in this though because many friends in the internet world have expressed a similar love for it! If that’s the case with you too, we’ll be fast friends!

Fact is, I eat peanut butter nearly every day of my life, three times a day. Yes, you read that right!

I eat three spoonfuls a day, almost every day!! It’s crazy, I know.

When I say that I could eat peanut butter and nothing else for the rest of my life, I really mean it.

Sure, I would miss donuts. A lot. I have major love for them too, but I could get over it. Peanut butter… I could not.

Besides, I'd have things like my white chocolate peanut butter truffle bars to carry me through. If anything in the world could give donuts a run for their money, it's those bad boys.

So when you live a life with peanut butter constantly on the brain, you find no shortage of ways to incorporate it into, um, practically everything.

I should also mention that I went through a phase late last year when I was eating French toast two or three times a day. #truth. Seriously. It was a lot of French toast.

What can I say? I’m a creature of habit. I figured if I was using whole grain bread and egg whites, really, how bad could it be? I was hooked on healthy French toast for months!

Between my nut butter obsession, and my fixation on French toast, a hybrid was bound to happen… which is how I bring you this amazing stuffed French toast featuring a hefty layer of creamy and rich peanut butter cheesecake in the middle of two slices of French toast. It’s dreamy!

The French toast is then topped with a super simple and easy peanut butter maple glaze. Let me tell you, peanut butter and maple complement each other beautifully!

The maple syrup brings out caramel-like and brown sugary flavors in the peanut butter… DELISH. This pairing is dynamite.

This is the perfect breakfast for weekend mornings! It’s a cinch to throw together, but since it’s on the more decadent side, it’s probably the sort of breakfast you want to save for special days of the week.

Let’s call it what it is: it’s basically dessert for breakfast!

Peanut Butter Cheesecake French Toast Recipe

    4 Servings

Ingredients

For the Peanut Butter Cheesecake Filling:
  • 1/2 cup Peanut Butter
  • 3 ounces Reduced Fat Cream Cheese, Softened
  • 1/2 cup Powdered Sugar
For the French Toast:
  • 8 slices Bread, Use your favorite
  • 1 Egg
  • 2 Egg Whites
  • 2 teaspoons Pure Vanilla Extract
  • 1/2 teaspoon Cinnamon
  • 3 tablespoons Milk
For the Glaze:
  • 1/4 cup Peanut Butter
  • 1/4 cup Pure Maple Syrup

Directions

To Prepare the Peanut Butter Cheesecake Filling:

  1. In a small bowl, combine peanut butter, cream cheese, and powdered sugar.
  2. Stir vigorously with a spoon or rubber spatula until thoroughly combined. Set aside.

To Prepare French Toast:

  1. In a medium bowl, combine eggs, egg whites, vanilla, cinnamon, and milk. Whisk until thoroughly combined.
  2. Dunk each slice of bread in the egg mixture, flipping it over to coat each side.
  3. In a large frying pan over medium heat, cook both sides of each bread slice until golden brown – about 3 minutes per side.
  4. While the bread is still warm, spread approximately 1/4 cup of peanut butter cheesecake filling onto one slice of bread. Top it with another slice, forming a ‘sandwich’. You’ll form 4 ‘sandwiches’ in all.
  5. Return each to the warm pan for about 1 minute to slightly melt the middle layer of peanut butter cheesecake.
  6. Remove the sandwiches from the pan, and serve warm with the glaze!

To Prepare Glaze:

  1. In a small bowl, combine peanut butter and maple syrup.
  2. Whisk until well-combined.
  3. Drizzle over each serving of French toast, about 2 tablespoons each.
