Summer is in full swing and I couldn’t be happier because with summer come peaches. I adore fresh, juicy peaches. Growing up, we had a peach tree in the backyard. There are few things greater in life than being able to simply go out into the yard and pick a ripe peach off the tree, eating it right there and then in the yard whenever we wanted.

My dad would always collect the fresh peaches to make his famous cobbler. These days I add my own flair to his classic recipe when I make my Jalapeño Havarti Peach Cobbler. Sweet, cinnamon kissed peaches baked to tender perfection bubble under a blanket of golden, cheese-laced biscuits.

Yes, cheese in the cobbler topping and it’s divine. The sweetness of the ripe peaches and the slight tanginess and soft spiciness of creamy jalapeño Havarti cheese is a match made in heaven.

So when I start seeing fresh peaches at the farmers market, I’m always sure to scoop up a bunch. Most recently I decided I wanted to make a peach bread recipe and viola! This Peaches and Cream Bread was born.

Fruit and cheese together is a classic pairing. Mascarpone and peaches is a favorite treat of mine. I sprinkle a little cinnamon over the mascarpone then I spread it on the peaches. The smooth, creamy mascarpone is so nice with the sweet pears. A nice glass of wine is all I need to make it a relaxing evening.

Channeling this sweet treat, I decided to transform it into this Peaches and Cream Bread recipe. It couldn’t be easier! Golden, flakey puff pastry is filled with the delightful mascarpone. The mascarpone is then sprinkled with cinnamon sugar and topped with fresh peach slices. It’s all enveloped in the puff pastry and sprinkled with more cinnamon sugar. Bake it up in the oven for just 15 minutes and what emerges is spectacular.

This bread is like handheld peach pie. It’s perfect for breakfast, brunch or even as an evening treat with a glass of wine. It’s perfect any time you are craving a little something sweet and special.

Ingredients
  

  • 1 sheet Puff Pastry
  • 6 ounces Mascarpone
  • 3 Peach Pitted and sliced
  • 1/4 cup Sugar
  • 1 tablespoon Cinnamon
  • 1 tablespoon Butter Melted

Instructions
 

  • Preheat oven to 375°F. Line a baking sheet with parchment paper. Set aside.
  • On a lightly floured work surface, open puff pastry sheet and lay lengthwise. Spread mascarpone down center of puff pastry, leaving about 1 inch space on the top and bottom.
  • Whisk together sugar and cinnamon. Sprinkle half the cinnamon sugar mixture over mascarpone. Arrange peach slices evenly over mascarpone. Fold up top and bottom inch of puff pastry then fold left side over peaches then the right side of the puffed pastry to snugly secure all the filling.
  • Place on parchment lined baking sheet, seam side down. Brush dough with melted butter. Cut slits in top of dough about every 2 inches. Sprinkle with remaining cinnamon sugar.
  • Bake in preheated oven for 15-20 minutes, until puffed and golden brown. Remove from oven and serve warm.
