Ingredients
- 1 1/2 cups All-Purpose Flour plus more for dusting
- 4 large Egg
- 2 1/3 cups Light Brown Sugar
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 1 1/2 cups Pecans
- 1 teaspoon Pure Vanilla Extract
Instructions
- Preheat the oven to 350 and spray a 13 X 9-inch pan with vegetable oil. Also, dust with flour.
- Beat the eggs with a whisk in a bowl and stir in the brown sugar until smooth.
- Pour into the top of a double boiler.
- Cook this mixture over simmering water for 20 minutes, stirring constantly, until it reaches 180 degrees F.
- Let cool for 5 minutes.
- Sift the one-and-a-half cups of flour, baking powder and salt together.
- Add the pecans to flour mixture and mix into the cooked mixture.
- Add vanilla and stir until combined.
- Pour the batter into the prepared pan and place the pan in the oven. Bake for around 25 minutes.
- Let it cool completely in the pan before cutting into pieces. Store in an airtight tin in the refrigerator.
Notes
2.3 cups of light brown sugar should be equal to a one-pound box.
