Microwave Lemon Curd Recipe

Ingredients

  • 1/4 cup Butter, melted
  • 1/2 cup Granulated Sugar
  • 2 Eggs
  • 1 Lemon, zested
  • 1/2 cup Lemon Juice

Directions

  1. In a bowl, whisk together eggs and sugar.
  2. Stir in lemon zest and lemon juice.
  3. Carefully stir in melted butter.
  4. Microwave lemon mixture for 1 minute. Stir.
  5. Continue to microwave in one-minute intervals until mixture begins to thicken and coats the back of spoon.
  6. Store in an airtight container in refrigerator.
