Mexican Sweet Potato Fries Recipe

You only need three ingredients to make amazing Mexican sweet potato fries! The dip is super easy to whip up in your food processor, too.

While we were busy moving, I got myself into some trouble with my toddler, Em.

She’s a feisty 2 1/2 year old by now, so I’m talking about some serious business here.
Here’s the deal. We ate at McDonald‘s twice or three times while we were knee-deep in boxes and driving back and forth between our old place and our new house.
It’s not something we usually do at all, yet for some reason my kid now knows McD from about a thousand miles away.

Now I’m the mom who bows her head in shame when her kid cries out “There’s Mac Dooooooonald‘s!” whenever the golden arches are somewhere to be seen.
I mean, honestly kid? Try learning “there’s the organic milk you work your butt off to afford buying for us!”

I’m exaggerating (per the usual), but you get my point.
Anyways, she’s a huge fan of fries and she keeps telling me that we’ll go eat fries now. Only, we’re not, so I promised her we’d make some once we were done with the move.
But then we all got sick for two weeks (yes, it was so much fun) and I didn’t have fries on my mind. At all.

Now if you think Little Miss McD-Lover forgot about her fries, you’re quite the opposite of right.
So once I felt like I could stand for more than five minutes again, I made fries with her. Oh, how I made fries!
Sweet potato. Mexican. Avocado. Basically all my favorite things in one recipe.

I cut them with the super-handy fry cutting disc thing (whatever it’s technically called) that came with my Breville food processor.
Honestly, I thought I would use my food processor all.the.time, but I’ve had it for over two years now and so far I’ve mostly used it to make fries and chips. Which probably tells you way too much about me.

But I digress. If you don’t have this amazing gadget of fry-cutting magic, you should get yourself one. Or you can cut your fries by hand, it’s just a tad more work.

Mexican Sweet Potato Fries Recipe

You only need three ingredients to make amazing Mexican sweet potato fries! The dip is super easy to whip up in your food processor, too.

Ingredients
  

  • 2 large Sweet Potato cut into fries
  • 3 tablespoons Taco Seasoning
  • 3 tablespoons Olive Oil
  • 1 Green Pepper
  • 1 Avocado small
  • 1 Lime juice only
  • 1 bunch Fresh Cilantro
  • Salt and Pepper to taste

Instructions
 

  • Preheat the oven to 425°F.
  • Combine the sweet potatoes, taco seasoning and olive oil on a cookie sheet. Bake for 15 minutes or until turning golden.
  • In the meantime, place all sauce ingredients into a mini food processor. Process until it has your desired consistency (can be more chunky or more smooth).
  • Serve the hot fries with the dip.
