Typically at this point in the season, here in Oklahoma, we’ve had a few tornadoes that tend to destroy our garden.

I’ll just keep praying they steer clear of us this year because my garden is reaping the benefits.

Of course, I also hope the squash bugs stay away too. We’ve planted a lot of different types of flowers to hopefully deter them from attacking our squash.

One thing that I love to serve especially during the summer is chicken salad, plus to keep it low carb and light, it’s great served in a zucchini.

If you want, you can even scoop out the zucchini and add it right to your chicken salad mixture too. It basically takes the place of adding celery to your chicken salad.

I top ours with green onions and shaved Parmesan. I have found these are not only tasty for a light lunch by the pool, but they are also great for parties too.

They make a delicious gluten free appetizer or party food.

The chicken salad can easily be stored to use throughout the week for a variety of meals, which happens to be why I enjoy making it each week.

I love to use it on a fresh bed of lettuce or a sandwich, but as gardening season picks up zucchini is the perfect choice.

Gluten Free Chicken Salad Zucchini Boats Recipe

    8 Servings

Ingredients

  • 3 cups Cooked Shredded Chicken
  • 1/3 cup Green Onions, chopped
  • 1/4 cup Nonfat Plain Greek Yogurt
  • 1/4 cup Light Mayonnaise
  • 1 teaspoon Chopped Fresh Rosemary
  • 1/4 teaspoon Fresh Dill
  • 1/8 teaspoon Salt
  • 2 Zucchini Squashes
  • Shaved Parmesan Cheese, for topping

Directions

  1. Place the chicken, green onion, yogurt, mayo, rosemary, dill weed, and salt into a food processor. Process it until it’s a fine consistency.
  2. Place in the fridge to chill for at least an hour.
  3. Cut the zucchini in half, then lengthwise.
  4. Scoop out the inside to make the boat. The inside can be chopped up and added to your chicken salad if you prefer.
  5. Add the chicken salad to each zucchini boat and top with cheese.
  6. Chill in the fridge or serve immediately.
