Being gluten free can be a bit of a drag when it comes to running through a drive-thru to get breakfast in the morning, because those biscuits just look so good, right? I have to say my mouth waters for one of those biscuits at local fast food locations, but my stomach cries out another story.

Along with being gluten free myself, my son is too and really it’s much harder for a child. I know it affects him when he will voluntarily not eat something that may contain gluten, which says a lot for a kid to deny pizza.

The great thing is though I recently made these Gluten Free Breakfast Pizza Cups and he LOVED them. He couldn’t get enough, plus they are simple to take with us because of how they are shaped, perfect to eat on the go. Not only that but they are loaded with protein so it’s a good balance in the morning too.

I decided to use a gluten free pizza crust mix to make these; however, you can also use your favorite homemade pizza crust recipe. Once the crust is made, you will then cut squares to mold the dough into a greased muffin pan. One pizza crust that makes a 12-14 inch pizza made about 8 pizza cups.

We filled ours with sausage, egg, and cheese. I also coated them with some cooking spray so that they would get nice and crisp. I used an olive oil spray, but you can also simply brush butter on top of the crust.

Gluten Free Breakfast Pizza Cups Recipe

Ingredients

Directions

  1. Roll out crust with gluten free flour as needed until it’s about 1/4-inch thick.
  2. Spray a muffin pan with non-stick cooking spray.
  3. Cut dough into 8 squares to fit and press into muffin cups.
  4. Fill each dough cups with sausage.
  5. Top each one with about half a tablespoon of egg, then divide cheese among cups.
  6. Spray each one with cooking spray to help brown the dough. This can also be done by lightly brushing it with melted butter.
  7. Bake for 10-15 minutes until browned and the egg is fully cooked.
  8. Let cool, remove from pan, and serve.
