Does anyone else feel like Christmas is creeping up quickly? With Thanksgiving so late in the month, I feel like I turned around and all my lists are in front of me, just waiting for attention. Not just gift lists, but baking lists and meal lists too. After all, just because it's a busy December, it doesn't mean we should be slacking on the eating department.

While my dinners might not be so well thought-out yet, I've already got Christmas morning breakfast planned. We love to celebrate the day with a big breakfast to tide us over for the time between opening presents and heading over to have Christmas dinner with the extended family. And what could evoke the season more than these Gingerbread Waffles?

I know some people are intimidated by waffles, but they're just as easy as pancakes. Plus, the machine tells you when they're ready! Still, if you'd prefer, you can easily make this recipe as pancakes.

These waffles are spiced just like the favorite cookie, and instead of icing I topped them with whipped cream and a drizzle of molasses. Don't be hesitant when it comes to the spices - you really want that flavor to come through! For the very best results, you need to use fresh spices. If your jar of ginger is gathering dust, it's time to refresh.

For an extra kick, add chopped candied ginger to the batter.

The batter does need to sit a little bit for the flavors to meld, so go ahead and whip it up while the kids are still trying to figure out how to get their toys out of the packaging.

Gingerbread Waffles Recipe

    6 Servings


  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground Ginger
  • 1/2 teaspoon Ground Cinnamon
  • 1/8 teaspoon Ground Cloves
  • 1/8 teaspoon Nutmeg
  • 2 Eggs
  • 1/4 cup Brown Sugar
  • 1 1/2 cups Milk
  • 1/2 cup Molasses
  • 4 tablespoons Butter, melted and cooled
To Serve:
  • Whipped Cream
  • Molasses


  1. Sift together dry ingredients in a large bowl.
  2. In another bowl, beat eggs, then mix in brown sugar, milk, and molasses. Pour mixture into dry ingredients and stir well to combine, but make sure to leave lumps in the batter. Let sit for at least 30 minutes.
  3. When ready to cook, stir in melted butter.
  4. Cook waffles according to waffle iron's instructions.
  5. Top with whipped cream and/or molasses, if desired.
