This easy lasagna recipe from Sandra Lee is super-satisfying and makes a great meal for the whole family

This easy lasagna recipe is ideal for busy weeknights. It's virtually foolproof, has just a few simple steps and comes together quickly - so if you were thinking lasagna is too much work for a weekday meal, then this is the recipe for you!

Easy and cheesy!

One of the things that makes this lasagna easier to prepare than others is the simple cheese sauce. Most lasagna recipes include an elaborate cheese sauce that you need to make from scratch.

This recipe, however, uses a simple combination of cottage cheese and mozzarella.

Cottage cheese is low in fat and calories, so this sauce isn't just easier, it's healthier too! If you prefer a richer taste and texture, you could try using ricotta instead. And whilst it has more fat and calories than cottage cheese, ricotta is lower in salt.

The noodles

Take care not to overcook the noodles in the first step of this recipe. That's because they will cook a SECOND time, once they're layered in the cooking dish and baked with the other ingredients. We like to cook the noodles for a few minutes less than suggested on the packaging.

Once your noodles are cooked, lay them one by one on a gently oiled baking sheet. If you simply set them aside to drain in a colander, they will probably stick together and become very hard to work with!

You might be planning on adding some extra vegetables to this dish - in fact, popping a few veggies into a lasagna is a great way to get kids to eat vegetables they might otherwise avoid!

Mushrooms work well, and so do spinach, bell peppers and zucchini.

Something to bear in mind, though, is that many vegetables give up a lot of water during the cooking process, which may leave you with a runny lasagna. To avoid this, sautée the vegetables beforehand, then strain off any excess liquid.

Easy Lasagna

    4 Servings

Ingredients

  • 1 16 ounce box Lasagna Noodles
  • 1 1/2 pounds Lean Ground Beef
  • 1 medium Yellow Onion, finely chopped
  • 1 teaspoon Garlic, minced
  • 1 tablespoon Dried Oregano
  • 2 cans Tomato Soup
  • 2 tablespoons Apple Cider Vinegar
  • 2 cups Small Curd Cottage Cheese
  • 2 cups Shredded Mozzarella Cheese

Directions

  1. Bring a large saucepan of lightly salted water to a boil and add the noodles. Cook according to the directions on the pack.
  2. Drain the noodles and arrange them lengthwise in a greased casserole, so that the bottom is completely covered.
  3. While the noodles are cooking, start browning the beef in a large frying pan over a medium heat. As the meat cooks, add the onion, garlic and oregano.
  4. When the meat is thoroughly browned, drain off the fat. 
  5. Next, pour in the soup and apple cider vinegar, then simmer for 20 minutes.
  6. Whilst the mixture is simmering, preheat the oven to 350 degrees F.
  7. Spread a layer of the cottage cheese over the noodles in the dish, then add a layer of the meat mixture.
  8. Cover with mozzarella cheese, then repeat the process until you have 3 layers. Finish off with a final layer of mozzarella and place into the oven.
  9. Bake for around 30 minutes, until the mixture is bubbling. Remove from the oven and allow to cool for 5 minutes before cutting.
