It seems like spring is finally starting to arrive around the country. After this harsh winter, it is very much welcome. With spring comes the start of fresh produce and farmer’s markets. I can’t wait for the farmer’s markets to be in full swing again, it is always my favorite part of the weekend.

I am so ready for spring that I already started some of my garden. I started a few things with seeds, and they are sitting by the window already starting to bloom.

Asparagus and peas are two spring veggies that are easy to find. Asparagus is one of my favorite vegetables, so I love when I can start to find it at the store on sale. Easter is coming up very soon, and I know I am going to have lots of ham leftover.

This creamy gnocchi dish is perfect to use up some veggies you have around as well as that leftover ham. Plus, it comes together in about 20 minutes, so it is perfect for a busy weeknight. I made this for the ladies of my cooking club this month. It received rave reviews. I think that everyone went back for seconds of this delicious creamy gnocchi.

Ingredients
  

  • 16 ounces Potato Gnocchi 1 package
  • 1 1/2 cups Asparagus chopped into 1″ pieces
  • 1/2 cup Frozen Green Peas
  • 1 cup Ham diced
  • 4 cloves Garlic minced
  • 2 teaspoons Olive Oil
  • 2 ounces 1/3 Less Fat Cream Cheese
  • Salt and Pepper to taste

Instructions
 

  • In a large skillet heat olive oil over medium heat. Add garlic and ham, sauté until ham starts to brown. Add cream cheese and half & half, stirring to melt and combine.
  • Meanwhile bring a large pot of water to boil. Add gnocchi. After 1 minute add asparagus and peas. Once the gnocchi are floating to the top (about 2-3 minutes later) drain.
  • Add to the skillet. Toss to coat. Season with salt and pepper. Bring to a simmer, and cook for a few minute until sauce thickens.
