I am not a big connoisseur of Indian cuisine. I enjoy a good chicken curry and a lassi drink, but beyond that, I'm a little clueless. The exception to my ignorance would be the vindaloo. I know all about a vindaloo!

When I was in college, my boyfriend and I went to sample a local Indian restaurant. This was one of those places that we passed every single day, but never bothered to patronize. There never seemed to be a lot of people dining at any given time. This is probably the reason we were always so hesitant about going in.

One day we decided to be brave and head in. We were the only people dining, so we had all the attention. This was my first experience with Indian food so as I was looking over the menu, I searched for anything with the word "spicy". The Vindaloo won. The waiter asked how hot I wanted it and me, being arrogant, told the waiter I wanted it really spicy. I adore spicy food and have a fairly high tolerance, but this meal even kicked my butt.

After my meal was served, and I had taken my first, eye-watering bite, I became keenly aware that our waiter was hanging in the wings watching me. I turned to him and gave him quizzical look. He stammered and said; "I've never seen a woman eat anything this hot before". I smiled proudly and then turned so he couldn't see my wipe my eyes and nose. At that point, my pride made me eat the whole plate. I paid for that later.

This chicken tikka masala is NOT spicy at all. It is a super simple take on the popular Indian chicken dish. Ground chicken, spices, tomato puree are simmered together until the sauce is savory and thick at which point a little plain Greek yogurt is stirred in.

This sloppy Joe is delicious, unique and so simple! It's a great recipe for nights where you want to treat your family to something a little different.

Chicken Tikka Masala Sloppy Joes Recipe

    4 Servings

Ingredients

  • 1 pound Ground Chicken
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Ground Cayenne Pepper
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1/8 teaspoon Cinnamon
  • 1 15 ounce can Tomato Sauce
  • 1 tablespoon Plain Greek Yogurt
  • 4 Buns
  • 1 jalapeños Jalapeño
  • Fresh Cilantro

Directions

  1. Spray a large skillet with non-stick spray and heat over medium heat.
  2. Add ground chicken. Cook and crumble chicken until no longer pink.
  3. Season chicken with salt, cayenne, cumin, paprika and cinnamon.
  4. Stir in tomato sauce and continue to simmer mixture for 15-20 minutes or until thickened.
  5. When mixture has thickened, stir in yogurt.
  6. Divide chicken between 4 hamburger buns.
  7. Top with sliced jalapeno and cilantro.
