Broiled Mango with Greek Yogurt is a simple breakfast made in the toaster oven. Quick, easy, and so refreshing!

Growing up my sister would torture me, tickling and teasing. Like most siblings, there have been times we downright disliked each other.

But she’s always had my back. Today, I’ve got hers.

See, my big sis loves all things tart, tangy and sour. Especially grapefruit.

One of her favorite breakfasts as a kid was half a grapefruit sprinkled with sugar.

With the focus of a surgeon, she’d use her grapefruit knife to carefully separate the segments. Slowly devouring each tangy-sweet bite.

These days, her mornings are hectic. Filled with disappearing shoes, conference calls and getting a 3-year old to preschool on time.

Like all busy parents, she’s got little to no time for breakfast.

And certainly not one requiring a special fruit knife.

So I’ve swapped her favorite citrus for an easier to prepare sweet and tart broiled mango with Greek yogurt.

It’s a breakfast that’s nutritious, satisfying and incredibly simple for anyone to prepare. We’re talking Slice-Broil-Top-Eat!

But the best part is the abundance of flavors packed into this morning meal.

Like in a baked blueberry mango crisp, broiling the mango brings out its honey-like sweetness.

Lime juice adds bright citrus freshness. Greek yogurt, a dose of protein and tangy flavor. 

You can even go all out and top your mango with a handful of chopped nuts, flaky coconut, or no-stir toaster oven granola.

In just 10 minutes, you can enjoy a healthy toaster oven breakfast and still spearhead a search party for that other missing shoe.

Ingredients
  

  • 1 large Mango Ripe
  • 1/2 teaspoon Coconut Sugar Or unrefined cane sugar
  • 1/8-1/4 teaspoon Chili Powder Or cayenne pepper
  • pinch of Fine Sea Salt
  • 2/3 cup Nonfat Plain Greek Yogurt
  • 1 Lime Sliced into wedges
  • Toasted Coconut Flakes
  • Granola
  • Chopped Nuts

Instructions
 

  • Turn on your toaster oven and set it to broil.
  • Hold the mango upright on a cutting board. Avoiding the pit in the middle, carefully slice each side off of the mango with a sharp knife.
  • Score the mango flesh in a crisscross pattern without breaking the skin.
  • Sprinkle each half equally with sugar, chili powder and salt.
  • Place mango halves on a roasting pan and broil for 4 to 5 minutes until the sugar begins to brown and caramelize.
  • Serve warm with a scoop of Greek yogurt, lime wedges and your favorite toppings.
