Blueberry Mojito gives you a little more enjoyment of summer. Refreshing, sweet, and so, so good.

The lazy days of summer are almost gone. Now, I’m not trying to throw away summer and rush in fall but let's face it, it's almost here. Soon we will be inundated with all thing apple, pumpkin and cranberry. Then there is the whole pumpkin spice latte craze. Ugh.

Luckily for you I’m still holding on to summer in the cocktail department. I don’t want to ever not have an endless supply of fresh mint and blueberries. They are seriously my favorite part about summer. The berries are so sweet and the mint is so hardy I can’t kill it.

I have such a hard time growing herbs because I’m pretty sure I was born with a black thumb. My poor basil plant is about on its last leg. If it could talk, I’m willing to bet it would ask me to take it out of its misery.

Now, about this drink. It’s so easy to make you’ll want to spend a day just sitting by the pool sucking these babies down. The hardest part about making this cocktail is thinking ahead in time to make and cool the simple syrup. However, if you “ain’t got time for that” you can always just muddle it all together with sugar too. It will eventually dissolve. Plus I’m not here to judge how you drink your cocktails.

When I make these cocktail, I like to throw my mint, blueberries, simple syrup, and lime juice into my cocktail shaker, muddle away, pour in the booze, add ice and then shake until the drink is nice and ice cold.

You can always strain out the crushed fruit and mint but I really like them in my drink. Plus after I’m done drinking I get an iced fruity treat. Plus-plus, I hate to waste food, and who doesn’t want a snack with their cocktail?

Blueberry Mojito Recipe

  1 Servings

Ingredients

  • 2 tablespoons Fresh Blueberries
  • 5 large Mint Leaves
  • 1 ounce Simple Syrup
  • 1 ounce Lime Juice
  • 2 fluid ounces Rum
  • Sparkling Seltzer Water

Directions

  1. In a large cocktail shaker add blueberries, mint, simple syrup, and lime juice. Muddle until the light scent of mint comes from the shaker and the berries are smashed.
  2. Pour in the rum, add a few ice cubes and shake until cold.
  3. Pour the mixture into a short cocktail glass and top with cold seltzer water. Add more ice if desired.
