Homemade pizza pockets are easy to make and taste great. They're a perfect ready-made snack or lunch that you can keep in the freezer!

I grew up when pizza pockets were a big thing. They came out and suddenly that was the best snack ever. Pizza you could make in the microwave in a matter of minutes.

I’m not gonna lie. If you offered me a pizza pocket right now, I’d probably say yes. They’re good.

But my poor, deprived children have never had one. They’re still around I’m sure — although I only know this because my husband used to buy them occasionally before we had kids and I actually cooked.

I’ve never bought them though. I had kids and decided that everything needed to be made from scratch in our house. Okay not everything, I’m not superwoman, I just wish I was. It’d be nice if that always happened — obviously it doesn’t. I do like to try and make as many things from scratch as I can though.

So I decided to try making pizza pockets. And you know what? It’s not that hard.

This no rise pizza dough takes minutes to mix up and makes the perfect pizza pocket crust when rolled out thin. Toss in some pizza toppings and seal the edges and voila, you have homemade pizza pockets.

I like to make a big batch and then toss them in the freezer after baking. They freeze well and make it super easy to make the kids lunches, even when I’ve neglected to go shopping and have nothing for sandwiches. My kids (and husband!) love these homemade pizza pockets for lunch. Plus they’re good both cold and reheated.

The kids are happy getting pizza for lunch (such a treat, right?) and I’m happy knowing that it was homemade. Makes pizza just a little bit healthier!

Homemade Pizza Pockets Recipe

    18 Servings

Ingredients

  • 1 recipe no rise pizza dough
  • 6 tablespoons pizza sauce
  • 1 cup shredded mozzarella cheese
  • pizza toppings, we like pepperoni and mushroom, or ham and pineapple

Directions

  1. Preheat the oven to 450°F.
  2. On a lightly floured surface, roll out the dough quite thin, about 1/8-inch thick. Cut out 3 1/2-inch circles.
  3. Top one dough circle with 1 teaspoon pizza sauce, 1 tablespoon shredded cheese, and a few pizza toppings.
  4. Brush a bit of water around the edge of the dough and place another dough circle on top. Seal the edges with a fork and place the pocket on a parchment lined baking sheet. Poke a few holes in the top with a toothpick to vent. Repeat with the remaining dough.
  5. Bake the pizza pockets for 13-15 minutes or until lightly browned.
