I’ll admit it – this recipe is oddball, and maybe doesn’t even sound that good or interesting. You’ll just have to muster up one of those ‘blind trust’ moments.

This dessert didn’t start out with peanut butter. Well, let me back up. I stumbled upon a recipe for peanut butter marshmallow squares. So technically they did start with peanut butter! However, I’ve made a lot of desserts with that combo in my time, and I’m a fan of fluffernutter like anybody else in the world, but I wanted to try something different! I thought that the base for the recipe was really solid, so I was going to do some substituting and switcheroo.

Enter the idea that I would substitute the marshmallows for Cinnamon Toast Crunch cereal (huh??), and the peanut butter for Biscoff cookie butter. Weird, yes, but doesn’t it sound amazing actually?!! Cookie butter Cinnamon Toast Crunch fudge? I think it’d be incredible! It’s definitely an unconventional and strange idea, but I thought it had major potential for success.

Sadly, they did not turn out. Obviously, if they had, you’d be seeing that recipe right here instead of the peanut butter Cinnamon Toast Crunch fudge that you’re seeing instead.

While cookie butter is a similar texture to peanut butter, I’m learning that the composition is too different that it just cannot be substituted in certain recipes. This was certainly one of them. It was super goopy and didn’t set up at all. Not good. Not appealing. Not a hit. At all.

So I ended up keeping the Cinnamon Toast Crunch cereal component, but reverted back to peanut butter. I guess I was really determined to put Cinnamon Toast Crunch cereal in this fudge for some reason! Apparently, I really liked that idea, and was sticking to it.

It all worked out. Strange those these sound, they’re really good. I made three pans in all, and we devoured them. My S.O. was particularly fond of them. He would eat them for breakfast, which is totally acceptable because, um, they contain cereal!!! I mean, I wouldn’t personally recommend that because they’re pretty darn sweet and decadent, but it worked for him.

Think about how delicious peanut butter and cinnamon are together, and what a little crunchiness does for a creamy fudge. That’s these. They’re also super simple to make, and ready in minutes!

You’ll just have to trust me.

Peanut Butter Cinnamon Toast Crunch Fudge Recipe

    24 Servings

Ingredients

  • 1/2 cup Unsalted Butter
  • 12 ounces Butterscotch Chips, (1 package)
  • 1 cup Creamy Peanut Butter
  • 2 1/2 cups Cinnamon Toast Crunch Cereal

Directions

  1. In a large saucepan over medium heat, combine the butter, butterscotch chips, and peanut butter.
  2. Cook and stir until the mixture is smooth, about 4-5 minutes.
  3. Fold in 2 cups Cinnamon Toast Crunch cereal.
  4. Spread evenly into a buttered 8x11 dish, and sprinkle with the remaining 1/2 cup cereal for garnish.
  5. Allow to set for at least 1 hour. To speed up the process, you can put it in the refrigerator for 15-20 minutes.
  6. Cut into bars, and enjoy!
