Taco Sloppy Joes make a sloppy joe out of a taco. Two greats together!
If I were to ask my kids what they’d like for dinner on any given night, I’m fairly confident the answer would be tacos. Salmon tacos, turkey tacos, beef tacos, chicken tacos, you name it – they’ll eat it! The only kind of taco we’ve never had is dessert tacos, at least, not yet. I have a feeling, thanks to these banana split tacos, it won’t take much longer.
Tacos are just so darn fun to eat aren’t they? The crunchy shell, all the toppings (especially guacamole), the chips and salsa on the side, and for the adults a margarita (or two-especially if’ it’s mango). The real reason my kids go wild over taco night is it’s the best excuse to eat with their hands. My kids love eating with their hands. It’s so weird to me.
While I love the taste of a good taco, I don’t enjoy eating tacos. Actually I should rephrase that. I do enjoy eating tacos as long as all the filling doesn’t fall out the other end as I’m biting into it. Seriously! I’m not alone in this am I? Please say no.
This happens every time I eat tacos. I pile on my meat, my cheese and all my other favorite toppings. I lick my lips and dig in only to have half my taco on the plate staring up at me. This is why I usually just end up eating a taco salad!
Being the genius that I am (to be read with sarcasm), I found a nifty compromise. The taco sloppy joe! I loved sloppy joes as a kid. Probably for the same reason my kids love tacos! I just remember it being a really fun meal and being very happy every time I ate it. Yes, my meat usually fell out the other end as soon as I took a bite, but I was ok with that.
I made this turkey sloppy joe in part because of nostalgia and in part because I knew it would please everyone. The kids can put their taco filling in a bun and eat with their hands. I can pile my toppings on an open-faced bun and not lose any part of my taco, not even one pinto bean!

Taco Sloppy Joes Recipe
Ingredients
- 1 pound Ground Turkey
- 1 clove Garlic
- 2 teaspoons Chili Powder
- 1 teaspoon Oregano
- 1/2 teaspoon Cumin
- 1/2 teaspoon Salt
- 1 cup Chipotle Salsa I used Frontera
- 1/4 cup Chicken Broth
- 14 ounces Pinto Beans Rinsed and drained
- 1 cup Frozen Corn
- 1 cup Cheddar Cheese Shredded
- 1 cup Lettuce Shredded
- 1/2 cup Diced Tomatoes
- 1 Avocado Diced
- 4 Hamburger Bun
Instructions
- Heat a large skillet over medium heat. Add ground turkey. Cook ground turkey until it has browned, crumbling as it cooks. Stir in black beans. Add garlic, chili powder, oregano, cumin and salt. Stir. Add broth and salsa. Reduce heat and cook for 10- 15 minutes or until mixture has thickened.
- Split each hamburger bun. Top each with turkey mixture, ½ cup of corn, ¼ cup of cheese, ¼ cup of lettuce, tomatoes and avocado.
