As we head into summer, my days will soon be spent at the pool - or at least that’s what I have planned in my head. Considering I have a toddler too, this could go much differently than what I’m envisioning, but wishful thinking!

While I’m soaking up the sun or chasing a toddler around the pool, I don’t want to be worrying about dinner when I get home. The problem though, is everyone in my house still needs to eat, right? That’s where these delicious slow cooker baby back ribs come into play.

I love ribs, absolutely love them. I love them even more when they fall off the bone and I’m not looking half animal-like trying to eat them. That’s why I love these ribs, they are so tender, juicy, and flavorful, plus they fall off the bone. I can even use a fork to eat them. I realize that’s probably like rib blasphemy for some people, like my husband, but for me, I am happy with it.

These ribs can be prepped the night before with just a bit of ranch seasoning mix and then BBQ sauce. As you are packing up the beach bag in the morning, set them in the slow cooker and let it do the work.

That means you can head out to soak up the sun without worrying about dinner. As soon as you walk in, dinner will be making the house smell delicious. Then cook up a few fresh veggies as side dishes and dinner is done.

I’m starting to envision the entire summer going just like this. I can only hope, right? Now, the real dream would be if we lived near a beach.

It’s time to talk dinner though, so pair these ribs with some potato salad and you are all set! They would even be great to serve at a backyard BBQ.

Happy rib eating!
