I
There’s no other way to say it than to say it: I published a cookbook!! My first cookbook, Delicious Probiotic Drinks, was released in early February. The book includes 75 recipes for naturally fermented beverages, such as kombucha, ginger beer, kefir, homemade yogurt, smoothies, and more! Each of these drinks is brewed in a unique way using a specific probiotic culture.
Let’s back up a minute. What exactly is a “probiotic drink”? Simply put, probiotic drinks are rich in healthful bacteria, which help maintain healthy gut flora. Probiotics help you break down and digest your food and also allow your intestines to absorb nutrients. In addition, probiotic drinks are full of healthy acids, enzymes, Vitamins, and minerals, making them immunity-boosting elixirs.
How in the world did I write an entire book on probiotic drinks, you ask? It all started with kombucha. If you are accustomed to drinking kombucha, you’re aware of the steep price tag. It typically costs $2.99 for a 16-ounce bottle – an expensive habit, particularly when you drink the beverage daily! Three years ago, I began brewing kombucha at home in order to make my love for kombucha more affordable. Over time, I learned how to flavor my homebrewed kombucha in fun and unique ways. After becoming fluent in kombucha, I taught myself how to brew other types of probiotic drinks. From there, this book was born!
While there are a couple of drinks in Delicious Probiotic Drinks that require upwards of 2 weeks to brew, there are also recipes that require far less time, such as kefir and homemade yogurt. While everyone has eaten store-bought yogurt, and most people have tried kefir, there is absolutely no comparison to the homemade versions! Incorporating homemade yogurt or kefir into fresh smoothies is healthful and oh so very tasty, which brings us to the smoothie recipe I’m sharing today.
This mojito smoothie is kind of like a piña colada meets mint mojito situation. It’s creamy, made with homemade kefir, coconut milk, and has zesty fresh lime and refreshing mint. While making smoothies for this book, I came to realize I LOVE smoothies that mimic cocktails. They turn out so flavorful, fun, and unique. While I love a great fruit (and veggie!)-packed smoothie, I’m also all about healthful treat smoothies such as this one. I made this smoothie using the Key Lime Kefir recipe from my book, but the recipe can easily be modified using plain kefir (or plain yogurt), which is what I have listed in the recipe.
Need a creamy tropical vacation in your life? This smoothie will take you there!
