Grilled Chicken Taco Pizza that’s gluten free and grilled. It’s easy to make and even easier to inhale at top speed!
As soon as I went gluten free I thought, no more bread, no more cookies, and no more pizza. I truly believed I was doomed. Then, I realized that with a simple switch of flours I could make all of my favorite foods myself. Thankfully that helped me cope with eating gluten free and it was not this horrible ordeal that I believed.
One food I quickly learned how to make again was pizza dough. After I found a pizza dough recipe that I loved, I was on my way to beautiful, homemade pizza again.
Then, one day my husband and I decided to try our hand at grilled pizza instead of cooking it in the oven. Let me say, pizza has never been the same. The taste of grilled pizza makes you pretty much scarred for life if you ever think you can eat an oven baked pizza again!
Making a grilled pizza is all about getting the heat and timing right. The grilled pizza dough is placed on your grill for a few minutes with no toppings.
This is where you have to really watch the crust to be sure you do not burn it because it literally takes just minutes. I like to keep our grill on medium heat and grill it for no more than 5 minutes.
Once it is grilled on one side, flip the pizza over and place all the toppings on the grilled side while the other side of the pizza is grilling. Then, you let it cook about another 5 minutes, again watching closely.
There are two things now that you need to watch for:
- Do not burn the bottom of the pizza
- Depending on your toppings, that your cheese melts.
Since this pizza is a taco pizza I kept an eye on the crust to be sure it did not burn and then also that the toppings were warm.
Once the pizza is fully cooked and ready to go, simply load it up with the taco toppings!
This will be both the messiest pizza and most delicious pizza you ever eat!
Remember though, once you start grilling pizza… you will never go back to oven baking them. I warned you!

Grilled Chicken Taco Pizza Recipe
Ingredients
- 1 Gluten Free Pizza Dough
- 2 cups Cooked Shredded Chicken
- 1 packet Taco Seasoning gluten free
- 1 15 ounce can Ranch Style Beans
- Lettuce
- Black Olives
- large Diced Tomatoes
- 1 cup Mexican Style Shredded Cheese
- 2 cups Fritos
- Catalina Salad Dressing
Instructions
- Begin by combing the chicken with the taco seasoning as instructed on the seasoning package. Then, set aside.
- Using the prepared pizza dough, roll it out and shape it for a pizza crust. This can be placed on a greased cast iron skillet, cast iron grill pan, or foil.
- Next place the pizza on the grill, keeping it on medium heat.
- Let this grill for about 5 minutes on one side; watch it closely as the grill time may vary depending on the heat and the grill.
- Carefully remove the pizza from the grill and flip it over, remember it will be very hot. At this point the uncooked side will be facing down and the cooked side would be facing up.
- Work quickly to spread the chicken evenly over the cooked side of the pizza then top it with the ranch style beans.
- Let the pizza grill until the bottom is cooked well, this is usually just about 5 minutes again; however, continue to watch it closely.
- Once the pizza is done, carefully remove from the grill and top with the remaining pizza toppings, lettuce, black olives, tomatoes, and cheese.
- Finish the pizza off right before serving by adding Fritos and Catalina Dressing.
