Chocolate Cherry Cheesecake Bars Recipe

Chocolate cherry cheesecake bars are fudgy, dense, and studded with creamy pockets of cheesecake.

Hey, friends, hey! Are we all on board with cheesecake still, or is there some fancy new quinoa dessert that we’re supposed to get behind?

I’ll admit that I’ve been off the sugar train lately. But trust me that when I do decide to have dessert, I HAVE DESSERT.

No health food desserts here – that’s just sad for everyone involved.

Unless it’s full of chemicals and fat and all the bad things in the universe, I do NOT WANT IT. Do not waste my time, sirs and ma’ams. No, thank you.

So, in honor of those I care for on this special holiday about love, I decided to create something truly decadent and totally NOT GOOD for you in any way, shape or form.

Not only are we making thick, chewy, fudgy chocolate cherry cheesecake bars, but we are making them with cake mix! And swirling them with cream cheese and sugar.

If you’re going to tell someone you love them with dessert, might as well go all-out, am I right?

If chocolate isn’t your thing, you’re in luck. These chocolate cherry cheesecake bars can be made with any flavor of cake mix. Yellow, French Vanilla, even Strawberry might be fun!

I even thought about drizzling these bad boys with chocolate ganache, but I didn’t want to totally freak you all out.

Unless you like being freaked out, in which case – go for the ganache. You only live once!

These babies are thick, so baking takes some time. When they are finished, the edges will be firm, and the center might be slightly jiggly.

When you poke a toothpick or knife in the center, it’ll come out with some fudgy crumbs but no raw batter! That’s how you know they’re perfect.

These are perfect for gifting or eating out of the pan while you watch bad rom-coms starring Matthew McConaughey. Enjoy!

Ingredients
  

  • 2 boxes Chocolate Cake Mix dark
  • 2 large Egg
  • 1 cup Water
  • 2/3 cup Vegetable Oil
  • 8 ounces Cream Cheese softened
  • 1/2 cup Granulated Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 1 large Egg
  • 20 ounces Cherry Pie Filling

Instructions
 

  • Line a 9×13 pan with foil and spray with nonstick spray.
  • In the bowl of your mixer, combine cake mix, eggs, water, oil, mixing on medium speed until smooth.
  • Spread evenly in prepared pan.
  • In a medium bowl, beat cream cheese, sugar, vanilla, and egg on medium-low until smooth.
  • Spoon over cake batter.
  • Spoon cherry pie filling over batter.
  • Using a knife, swirl horizontally and vertically.
  • Bake for 40 minutes or until edges are set and a toothpick inserted in the center comes out with fudgy crumbs.
  • Let cool completely, then chill until firm.
  • Remove foil and bars from pan and cut into bars. Serve. Store uneaten bars in the refrigerator.
