Ranch Cheddar Chicken is a great way to liven up your weekly chicken dish. So easy and flavorful!

Raise your hand if you have chicken on the menu this week? Pretty sure everyone is raising their hand. Did you make the same chicken you always do? When I was growing up my mom would make chicken breasts with salt, pepper, garlic powder and paprika on them.

We would have them pretty much every week. They would be served with probably canned corn and maybe the box version of the Mushroom Rice Pilaf. Not that my mom wasn’t a good cook, she just worked full time and didn’t spend a lot of time trying out new recipes.

So now I go to the extreme and almost never make the same thing in the same month. But this ranch cheddar chicken is one that is requested over and over again.

The concept for this chicken dish is simple. I have seen versions of this before that just spread mayo on the chicken and then sprinkle with bread crumbs. That seemed a little boring to me, and my family loves anything with ranch, so I decided to mix it up.

Plus, I always have ranch seasoning packets in my pantry. It is one of those things that I can never remember if I have one, so I always buy another one. Anyway, I mixed the seasoning packet with the mayo for tons more flavor! Plus, cheese. I mean…. Cheese!

I like to use chicken tenders when I am baking chicken like this. They are pretty much all the same size, and they cook much quicker than a full chicken breast. So they are great for weeknights. Plus, they are often on sale for the same price, so it doesn’t cost anything extra.

The mayo mixture on top makes this ranch cheddar chicken super moist and so flavorful. Serve with pan charred asparagus or roasted broccoli for a complete meal! You can be eating in less than 30 minutes, and the whole family is going to be happy!

Ranch Cheddar Chicken Recipe

    4 Servings

Ingredients

  • 1-1 1/2 pounds Chicken Tenders, Or boneless skinless chicken breasts
  • 1/2 cup Mayonnaise
  • 1 1 oz packet Ranch Dressing Mix
  • 1 tablespoon Parmesan Cheese, Grated
  • 1/3 cup Cheddar Cheese, Shredded
  • 1/3 cup Panko Breadcrumbs
  • Cooking Spray

Directions

  1. Heat oven to 425°F. Place a cooling rack over a baking sheet lined with foil.
  2. In a small bowl mix together mayo, ranch dressing mix, and Parmesan cheese.
  3. Arrange chicken pieces in a single layer on the cooling rack.
  4. Spread mayo mixture evenly over the top of the chicken.
  5. Mix together panko breadcrumbs and cheddar cheese.
  6. Sprinkle over the chicken.
  7. Spray the chicken with non-stick spray.
  8. Bake for 15-20 minutes, until the chicken is cooked through.
