How to Make Chocolate Pancakes


Maybe it’s a holiday or someone’s birthday.

Perhaps you’d just like to make an ordinary day special.

Then we’ve got the answer to start the day right.

Let’s make chocolate pancakes.

Chocolate Pancakes

In a large bowl, mix together 2 egg yolks and sugar, while still whisking, add 1 and 1/3 cup milk.

Carefully fold in 2 whipped egg whites with a spoon rather than a whisk.

Add and mix 3 tablespoons butter, melted and 1 teaspoon vanilla extract.

In another large bowl, mix 1 and 1/2 cups flour, 1/4 cup cocoa powder, and 2 and 1/2 teaspoons baking powder.

Form a little well in the middle and pour the milk and eggs mixture.
 
Stir until the batter is smooth.

Mix in 3 and 1/2 ounces finely chopped chocolate.

Then et the batter sit for 15-20 minutes.

If you’d like to add chocolate ganache, heat the1 cup heavy cream in a small sauce pan without letting it boil.

Take off the heat and add 8 ounces chocolate chips to the cream and mix until perfectly smooth.

Over low to medium heat, pour 1/4 cup of pancake batter on a well-oiled pan.

When bubbles start to form on the surface of the pancake, flip and cook it for a minute on the other side.

When the pancakes are ready, pour the chocolate ganache on top (if the ganache has hardened while you were making the pancakes, you can microwave it for 15-20 seconds).

Feel free to garnish with raspberries or strawberries.
