Let’s learn how to make these enticing Eggplant Roll-Ups.
First, preheat your oven to 350º.

Slice the ends off of 2 eggplants and then slice them length-wise into 1/4 inch slices.
Then lay them out on a baking sheet covered in parchment paper.
Salt both sides of the eggplant slices and let them sit for 20 minutes, then dry each slice with a paper towel.
Bake until soft, approximately 20 minutes.
In a medium-size bowl, mix 2 cups ricotta cheese, 1 cup mozzarella cheese, 1/2 cup parmesan cheese, 1/4 cup basil, and 1 egg.
Remove eggplant slices from the oven and turn oven up to 400ºF.
Spoon about 2 tablespoons of the cheese mixture onto eggplant slice and roll it up. Repeat for each slices.
In a 11×17-inch baking sheet, pour ½ cup of marinara sauce, then add all the roll-ups seam down.
Pour remaining ½ cup of marinara sauce, and top with basil and parmesan.

Bake for an additional 25 minutes, or until cheese is melted and golden brown.
