How to Make Broccoli Cheese Balls

This healthy snack can be used as an appetizer, side dish, or just something to munch on in between. We’re making Broccoli Cheese Balls!

Preheat your oven to 400F.

Line a baking sheet with parchment paper.

Grate 1/2 cup cheddar cheese and 1/2 cup parmesan cheese using the small holes of the grater.

Take one bunch of broccoli and cut the broccoli florets in very small pieces and transfer to a large bowl.

Add cheese, 2 chopped green onions, 2 cloves minced garlic, 1/2 cup ground rolled oats, 1/4 cup breadcrumbs, and salt and pepper to taste into the bowl.

Add 2 eggs and mix to combine. If it is still too dry you can add another egg.

Use an ice cream scoop to take equal portions of broccoli and cheese mixture and form into balls.

Place the balls on the prepared baking sheet and sprinkle with a bit of vegetable oil over the top.

Bake for 25 to 30 minutes until slightly golden.
