In life, I feel it's the simple things that matter most. Relaxing with family, a leisurely meal with good friends, watching my pup chase his tail or my girls playing together. Sometimes the simplest things bring the most joy. 

This even applies when it comes to food. This 7Up cake is a great example of simple perfection.

Don't get me wrong, there are times when I go out to dinner and all I want is decadence. This usually means something with 1500 calories and truth be told, there's likely ganache involved.

Other times though, simplicity reigns supreme. A good ol' fashion pound cake is the queen bee of cakes in my book for a variety of reasons.

They're easy as pie to throw together. It doesn't get much better than a one bowl baking project, now does it? I also love their versatility. You can enjoy them plain or jazz up the batter with any number of fruits, chocolate chips or flavorings. In this case, I prefer mine a little more classic and "un-messed-around-with."

This 7Up cake fall squarely into the category of dessert perfection all on its own. It's a classic pound cake whose only embellishment is a hint of lemon.

Serve this cake with only a dusting of powdered sugar and you're good to go. Add a simple glaze or fresh berries and whipped cream, you have a cake that's a little more impressive but still has simple, fresh flavors.

I personally like it best just with powdered sugar but I also remember how much I enjoy Cherry 7Up and decided to give it a go with a cherry glaze. The cherry and hints of lemon and vanilla in this cake all paired so nicely together. Glazed or dusted, either way this cake will definitely give whoever you make it for a simple feeling of joy.

7Up Cake Recipe

    12 Servings

Ingredients

Cake:
  • 1 1/2 cups Butter, room temperature
  • 2 3/4 cups Sugar
  • 1 teaspoon Lemon Zest
  • 5 large Eggs
  • 2 teaspoons Lemon Extract
  • 1 teaspoon Pure Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 cup 7 Up
Cherry Glaze:
  • 1 cup Confectioners Sugar, sifted
  • 2 tablespoons Heavy Cream
  • 2 tablespoons Maraschino Cherry Juice
  • 1/2 teaspoon Pure Almond Extract

Directions

  1. Preheat oven to 350°F.
  2. Spray a 10-cup bundt pan with cooking spray that contains flour or grease and flour the pan well. Set aside.
  3. In the bowl of a stand mixer, fitted with a paddle attachment or in a large bowl, using a hand mixer beat the butter until light and very fluffy, about 5 minutes on medium-high speed. Add the sugar and lemon zest and continue beating for another 5 minutes on medium-high speed.
  4. Add the eggs, one at a time mixing well after each addition and scraping down the sides as necessary. Add the extracts and mix again.Add the flour and 7Up in small additions, alternating between the two, beginning and ending with the flour. Mix between additions until all the flour is moistened taking care not to over mix.
  5. Scrape the mixture into the prepared pan and bake in a preheated oven for 1 hour 20 minutes or until a tester inserted in the center comes out clean.
  6. Remove from over and cool in pan for 15 minutes. Invert pan onto a cooling rack and remove. Cool completely.

 

Notes

For Cherry Glaze: Mix all the ingredients well in a bowl and drizzle over cake.
