Sausage Balls are so simple to make! You just need baking mix, cheese, and a little bit of seasoning.
Soooo Sausage Balls is like the worst name for a recipe ever. To be fair, I also thing cake balls are terrible, but Sausage Balls just sound somehow… worse.
I can’t call them anything else though. They just are what they are.
This is the recipe my sister always brings on holidays. They are simple to make and really, simple food is what I needed this round. See, last month when I made these Smothered and Covered Hash Browns, there was a string of emergencies.
We could have called that post,”Food Fanatic Causes Kitchen Fire and Dog Panic!!!,” or “Multitasking with Hot Oil for Dummies,” or “How to Fire Your Alarm Company, a Case Study.”
What had happened was, my day was going swimmingly. I ran through my inbox and morning checklist like a pro. Knocked out all the important desk jobby things I had waiting on me. The timing was perfect.
Laundry going downstairs, work getting handled upstairs… I was feeling pretty proud of myself.
All I had to do was photograph an already tested recipe, eat the fruits of my labor for lunch, and then head back to my desk for some quick editing. PIECE OF CAKE.
But see, I have this stupid glass cooktop (not a fan, y’all) and it gets really hot, really fast. Add to that the stupid hood that doesn’t vent to the actual outdoors, it just sucks up whatever is happening on the stove and shoots it up over my head where it can grease up my high cabinets really well. It’s very professional over here is what I’m saying.
So I heated the oil in the pan, went to throw in my frozen hash browns, and the oil… it was too hot. It was smoking. So I turned on the useless hood fan and decided to walk my smoky pan out the back door to the deck because my smoke alarm is near the kitchen and it’s ultra sensitive.
The thing is though, that the motion of me lifting that pan from the stove and walking it 10 feet to the back door was just enough fresh air to light the smoky oil on fire.
Now I am holding a flaming, smoking pan and trying to hustle those last few feet to the back door, all while saying all the 4-letter-words that I can think of and sending up a silent word out to the universe begging for the smoke alarm to STAY OFF.
I’m guessing you know what happened next, though. Because all signs point to a smoke alarm and I’ll tell you it did NOT disappoint. I left the back door ajar and ran wildly to the keypad where the alarm system was screeching so loudly that I couldn’t think of the code to disarm it, and then stared at the screen of my cell phone willing the stupid alarm company to call so I can tell them false alarm!
Cause here’s the other thing you should know: I live like half a mile from the fire station.
Oh! And I have six large + 1 small dogs here. While all of this is going on, one is hiding under my desk, two more are peering out from under the dining room table, the two with sense are standing in the backyard, one is standing frozen in the center of the room looking bewildered, and the little one is in the hall barking at the source of the noise, yelling it in her tiny dog voice to STFU.
So the phone didn’t ring and once I finally punched the correct code into the keypad it was 100% too late.
I could hear the sirens blaring.
Now, to add insult to injury, we have more ear piercing noise, and my neighbors are all coming out to see why there’s a fire truck full of firemen in full gear in my driveway.
Also the dogs are completely losing their minds at this point. STRANGER DANGER!!!!!!
I squeezed out the front door in an attempt to keep the monsters in and marched up my driveway to report that this is all just a big misunderstanding because I am doing too many things and I hate my alarm company and omg why am I still on hold with them?!
What I’m telling you here is that bad name or no, Sausage Balls are really easy and super delicious.
