Banana

Pancakes with bananas instead of eggs are so good you may wonder why you'd never used them all along! They have a natural sweetness that means you can cut down on sugary toppings too, plus they bring added health benefits to the dish.

Don't forget that bananas have a fairly dominant flavor which will come across in the pancakes, so make sure your other ingredients are compatible with them.

Applesauce

Applesauce makes a fantastic replacement for eggs - it's sweet, tasty and with just the right texture. It's easy to make your own healthy applesauce at home, but if you decide to use the shop-bought variety, make sure you opt for unsweetened or your pancakes may be sweeter than you'd like.

Flaxseeds

Flaxseeds are a popular egg replacement, but they're not an ideal choice for pancakes because they can affect the final texture. Nevertheless, in a pinch they still make an acceptable substitute, as long as you add an extra ingredient to make the pancakes fluffy.

Note: You can use chia seeds instead of flaxseeds and treat them in the same way.

  • Replace 1 egg with 1 tablespoon of ground flaxseeds.
  • Mix the seeds with 3 tablespoons of warm water and allow to stand for 15 minutes, by which time the mixture will have developed a gel-like texture.
  • Add the mixture to your pancake recipe, along with half a teaspoon of baking powder.

Pureed raisins

Pureed raisins are wonderfully sweet - you really won't need to add any other sweetener to your recipe! To puree raisins, first soak them for at least 30 minutes in warm water. This will plump them up nicely, ready for blending!

Natural yogurt

Yogurt is an excellent substitute for egg in pancakes, because it's good at binding everything together and also helps achieve that fluffy texture you want.
