My 2 year old, Lucy, is obsessed with cake.
My son who is 10 couldn't really care less about cake. He loves brownies and candy and the occasional doughnut, but he just doesn’t flip out about all sweets like I do.
I don’t discriminate – he and my husband, however, have very strict restrictions on what desserts they will and will not eat.
My son won’t eat anything with frosting. No frosted cakes or cupcakes, only the occasional glaze and usually only after I convince him that it’s NOT frosting.
No cheesecake or anything cream cheese-y. Nothing too messy.
Nothing with nuts or coconut. And no oatmeal cookies.
My husband, on the other hand, will not eat any dessert with fruit. Whether it has fruit in it like an apple pie or is fruit flavored like strawberry cake, he will have nothing to do with it. I remember once early in our marriage, I prepared the most beautiful apple pie with a lattice top crust.
I was so proud of that pie…until it sat there for days, with only a few slices cut out of it for me.
The only wonderful thing to come out of that experience was the inevitable guilt my husband feels when I bring it up at convenient times. Like when I need him to run an errand for me.
The bad kind, like oil changes or buying stamps. I don’t know, I just feel like I’m allergic to the post office.
You could imagine how thrilled I was to discover that my Lucy will eat literally any dessert. Nuts in it? No problem?
Piles of frosting? She’ll lick it right off! Dark chocolate? Um…hello, it’s still chocolate. Homegirl knows sugar when she sees it, and she has no fear.
Needless to say, this cake was not for my husband or my son. It was for Lucy and I, who shared generous slices at a tea party, clinking our tiny cups together in “cheers” and taking giant, happy bites. This cake is an easy one to throw together and looks and tastes wonderful – cool, creamy filling and topping with a moist banana pudding flavored cake with vanilla wafers baked inside.

Banana Pudding Bundt Cake Recipe
Ingredients
For the Cake:- 1 box Cake Mix, Yellow
- 1 small box Instant Banana Cream Pudding Mix, 3.4 ounces
- 1/2 cup Water
- 1/2 cup Vegetable Oil
- 1 cup Sour Cream
- 4 large Eggs
- 10 Vanilla Wafers
- 3/4 cup Milk, Cold
- 1 small box French vanilla pudding mix
- 1/3 cup Powdered Sugar
- 4 ounces Whipped Cream Cheese
- 8 ounces Cool Whip, Thawed
- Frozen Whipped Topping
- Banana Slices
- Vanilla Wafers
Directions
For the Cake:
- Preheat oven to 350°F. Spray bundt pan with vegetable oil spray, then lightly coat with flour. Set aside.
- In the bowl of your mixer, combine cake mix, pudding mix, water, vegetable oil, sour cream, and eggs.
- Beat on low speed until just combined. Scrape the sides of the bowl with a rubber spatula, then beat for 3 minutes, until thick and smooth.
- Pour batter in to bundt pan. Gently press cookies around the pan into the center of the batter and bake for 45-55 minutes, until cake is set and a knife inserted in the center comes out clean.
- Let cake cool in the pan for about 15 minutes, then carefully turn onto a wire rack to continue cooling.
For the Frosting:
- In a large bowl, whisk together milk, pudding, and powdered sugar until thick and smooth. Whisk in cream cheese until fully blended, then fold in Cool Whip. Place in the refrigerator for an hour to firm.
- Split cake horizontally, using a serrated knife. Spread about 2/3 of filling/frosting on bottom half of cake, then top with top half. Spread or pipe remaining topping on top of cake.
- Garnish with whipped topping, vanilla wafers, and sliced bananas.
